Family Recipes Behind an Industrial Park Door

Noble Cut Distillery sits tucked into the back of an industrial park in Gahanna, Ohio, just northeast of Columbus, the kind of nondescript building you wouldn’t stumble across by accident. Founded in 2014 by Tony Guilfoy and business partners including Ben Vause, it took until 2018 for licensing, construction, and production to come together before Noble Cut started selling spirits. The name comes from the distilling process itself: the “noble cut” refers to the hearts cut, the most desired portion of a distillate once a distiller separates out the unwanted alcohol, and that hearts cut is the only spirit used in any Noble Cut product. The distillery’s roots go back further than 2014, though. Tony’s maternal grandfather made wine, whiskey, and moonshine during Prohibition, and his grandmother brought a six-generation family limoncello recipe from Italy that’s since become one of Noble Cut’s signature products.

Award-Winning Vodka And a Six-Generation Limoncello

Noble Cut has built its reputation on three things: award-winning vodka, a flavored whiskey lineup built around a standout salted caramel expression, and a limoncello recipe with real family history behind it. Their vodka has earned double gold at the SIP Awards, and their corn vodka, VoHio, is one of Ohio’s top-selling vodkas. Noble Cut has also built out state-specific branded vodka lines packaged to match major college sports programs, and their spirits are featured in several celebrity-owned bars in Nashville and Pigeon Forge. Production runs up to 60,000 cases annually out of a surprisingly compact operation.

THE VISITOR EXPERIENCE

Bigger Than It Looks From the Outside

The tasting room is bigger than the industrial park exterior suggests — an industrial-loft-style space with seating for around a hundred people, a full bar, pinball machines, and a dart room. Food (mostly pizza, including a vodka sauce pizza made with their own vodka) is served as a separate operation from the bar, so food and drinks are ordered separately. Tours run Saturdays at 12:30 PM and 3:00 PM and start with a presentation on Noble Cut’s history and products before moving into the production floor to see the mash tun, fermenters, still, and bottling line, followed by a tasting of six pours.

IS IT WORTH VISITING

A Local Hangout Not Just a Tour Stop

Noble Cut works well for Columbus-area visitors looking for a local distillery experience, especially fans of flavored whiskey, vodka, or limoncello. The tasting room doubles as a genuine hangout beyond the tour itself, with craft cocktails, food, and games, making it more of a repeat-visit spot than a one-and-done stop. If you’re expecting a large-scale production tour, the operation itself is fairly compact — the tasting room and overall experience are the bigger draw here.

Book ahead for Saturday tours if you can, though walk-ins are sometimes accommodated depending on availability. The bar offers a flight (four pours for $7) if you want to try spirits before or instead of the full tour. The distillery sits in a business park in Gahanna, so double-check the suite number when you’re driving in. If you’re not usually a limoncello drinker, try it anyway — the family history behind the recipe is worth hearing even if the spirit itself isn’t your usual pour.
