ABOUT THIS DISTILLERY

Bear Creek Distillery sits in Denver’s arts district on South Acoma Street, founded by husband-and-wife team Jason and Jennifer Walsh in 2012. Jason brought 15 years of brewing experience from Colorado’s craft beer scene, while Jennifer handled the business side after a career in marketing. They started with a 250-gallon copper still in a converted warehouse space, focusing on bourbon and rye whiskey production using traditional methods with Colorado grain. The distillery opened its doors to visitors in 2014, adding a tasting room that showcases exposed brick walls and industrial touches that reflect the building’s manufacturing past. What began as weekend tours has grown into a full visitor experience, with the Walshes often personally leading tastings and sharing stories about their transition from beer to spirits. They’ve maintained their small-batch approach, producing around 1,000 bottles per month while slowly expanding their barrel aging program.

WHAT SETS THEM APART

Bear Creek stands out for sourcing 100% of their grain from Colorado farms within 150 miles of the distillery, including corn from the San Luis Valley and wheat from the Eastern Plains. Jason Walsh’s brewing background shows in their meticulous attention to fermentation, using longer fermentation times than most distilleries and custom-designed fermentation tanks that allow for better temperature control. Their rickhouse sits at 5,280 feet elevation, where the dramatic temperature swings and low humidity create unique aging conditions that concentrate flavors faster than traditional bourbon regions. They’re also one of the few distilleries in Colorado that mills their grain on-site daily, ensuring maximum freshness in their mash bills.

THE VISITOR EXPERIENCE

Tours start in the production area where you can see the milling and mashing process, with Jason or one of his assistants explaining how altitude affects distillation. The copper still dominates the main room, and you’ll watch them make cuts during production runs if you visit on weekdays. The tasting room feels more like a neighborhood bar than a corporate visitor center, with Jennifer often behind the bar pouring samples and telling stories about their early days. You’ll taste their flagship bourbon alongside experimental batches, learning how different barrel chars and aging times affect flavor. The whole experience feels personal and unpolished in the best way, like you’re visiting friends who happen to make whiskey.

IS IT WORTH VISITING

This is perfect for whiskey enthusiasts who want to understand the craft distilling process without the crowds of larger operations. You’ll leave with real knowledge about grain sourcing, altitude’s effect on aging, and small-batch production methods. The intimate setting means you can ask detailed questions and get honest answers about the challenges of craft distilling. However, if you’re looking for a polished corporate experience or large group activities, this might feel too casual. The product lineup is still developing since they’re relatively young, so don’t expect a huge variety of aged spirits. But for authentic craft distilling education and genuine hospitality, it’s exactly what Colorado distilling should be.

⚠️ VISITING TIPS

Call ahead rather than just showing up, especially on weekends when they sometimes have private events. Jason prefers to do tours when production is happening, so weekday afternoons often offer the best experience. Park on the street or in the small lot behind the building. Ask about their barrel program if you’re interested in purchasing a personal barrel. Try their rye whiskey if available, as Jason’s brewing background really shows in the grain bill complexity. Don’t expect a gift shop full of branded merchandise, but they do sell bottles directly and often have experimental batches available only at the distillery.

FREQUENTLY ASKED QUESTIONS

Bear Creek Distillery — Visitor FAQ

Do I need to make a reservation for tours?
Yes, Jason and Jennifer prefer appointments so they can give you personal attention and ensure someone’s available to show you around. Call or email through their website to schedule. Weekend spots fill up faster, especially during summer months.
What’s the difference between visiting on weekdays versus weekends?
Weekdays offer the best chance to see active production and meet Jason in the distillery. Weekend tours focus more on the finished products and aging process since they typically don’t distill on Saturdays and Sundays. Both are worthwhile, but weekday visits feel more behind-the-scenes.
Can I buy bottles that aren’t available in stores?
Absolutely. They often have experimental batches, barrel-strength versions, and single-barrel selections only available at the distillery. Jennifer keeps a list of distillery-exclusive releases, and they’ll let you know what’s special about each one during your tasting.
