ABOUT THIS DISTILLERY

Urban Distillery Making Real Texas Whiskey

Devils River Whiskey isn’t your typical craft distillery story. Founded by Mike Cameron, a former oil and gas executive, and his team in San Antonio’s historic Southtown district, this operation started with a simple obsession: creating whiskey using the pristine Devils River water from Southwest Texas. The distillery opened its doors in 2017 in a converted warehouse space on East Houston Street, bringing small-batch bourbon production to the heart of San Antonio’s cultural corridor. Cameron’s journey from energy industry veteran to whiskey maker began with his fascination with the Devils River region, where spring-fed water flows through ancient limestone formations. The team, led by master distiller Trey Steele, focuses on traditional bourbon production with a Texas twist, using locally-sourced grains when possible and that signature Devils River water as their foundation. Their philosophy centers on patience and precision—letting the spirits develop naturally without rushing the process. The 8,000-square-foot facility houses custom copper pot stills and serves as both production facility and tasting room. You’ll find exposed brick walls, industrial touches mixed with Texas charm, and the constant hum of fermentation and distillation. The operation produces small-batch bourbon and rye whiskey, with most of their products aged in new charred oak barrels. It’s a working distillery where you can see the entire process from grain to glass, making it one of the few places in San Antonio where whiskey production happens on-site.

WHAT SETS THEM APART

Devils River Water Changes Everything

The Devils River water source sets this distillery apart from most craft operations. This limestone-filtered spring water from Southwest Texas contains specific mineral content that Cameron’s team believes creates a smoother, more refined whiskey profile. Unlike many craft distilleries that source neutral spirits and age them, Devils River produces everything in-house using traditional pot still distillation methods. Their location in San Antonio’s Southtown also makes them one of the few urban distilleries in South Texas, bringing whiskey production to a city better known for beer and cocktails. The facility operates as both a production distillery and visitor destination, with tours that show active distillation rather than just empty equipment.

THE VISITOR EXPERIENCE

Working Distillery Where Production Never Stops

Tours at Devils River take you through their working production facility, where you can see the mash tuns, fermentation tanks, and copper stills in action. The space smells like sweet corn mash and oak, with that distinctive yeast aroma that tells you whiskey’s being made here. Tasting sessions happen in their industrial-chic tasting room, where exposed brick meets polished concrete floors and vintage whiskey barrels serve as décor. You’ll sample their core lineup while learning about their water source story and production methods. The staff knows their product well and can explain the differences between their various mash bills and aging processes.

IS IT WORTH VISITING

San Antonio's Hidden Whiskey Gem

If you’re a whiskey enthusiast curious about Texas distilling or want to see actual production happening, Devils River delivers a solid experience. It’s particularly appealing to bourbon lovers who appreciate learning about water’s role in whiskey character and those interested in the craft distilling movement in Texas. The tours aren’t as polished as some larger operations, but that authenticity works in their favor. However, if you’re expecting a sprawling campus or extensive barrel aging facilities, you might find it smaller than anticipated. It’s best for visitors who enjoy intimate, educational experiences over flashy presentations.

⚠️ VISITING TIPS

Book your tour in advance through their website or by calling directly, especially on weekends when they tend to fill up. The distillery is in Southtown near the Blue Star Arts Complex, so GPS works well, but look for the Devils River sign on the building since it’s in a converted warehouse space. Street parking is available but can be limited during peak times. Ask about their water sourcing story during the tour—it’s genuinely interesting and central to their identity. Try their rye whiskey if it’s available for tasting, as it showcases their distillation style well. Avoid expecting a large-scale operation; this is craft distilling at an intimate scale.

FREQUENTLY ASKED QUESTIONS

Devils River Whiskey Distillery — Visitor FAQ

What makes Devils River water special for whiskey production?
Devils River water flows through limestone formations in Southwest Texas, creating specific mineral content that the distillery believes produces smoother, more refined whiskey. The limestone filtration removes impurities while adding minerals that enhance the fermentation and distillation process.
Do you distill everything on-site or source neutral spirits?
Devils River produces all their whiskey from scratch on-site using traditional pot still methods. They don’t source neutral spirits from other producers, making them a true grain-to-glass operation where you can see the entire production process during tours.
How long do tours take and what’s included?
Tours last about 45 minutes and include the production floor, distillation equipment, and aging areas, followed by a guided tasting of their bourbon and rye whiskey. Reservations are required, especially on weekends when tours fill up quickly.
