Texas Tail Distillery sits in the heart of Galveston’s historic downtown district on Postoffice Street, occupying a restored brick building that captures the island’s maritime character. Founded by husband-and-wife team Steve and Sherry Gilmore in 2019, this craft operation represents Galveston’s first legal distillery since Prohibition. Steve, a former oil industry engineer, and Sherry, who brought hospitality experience from years in restaurant management, decided to channel their love of craft spirits into something uniquely Galvestonian. They produce vodka, gin, and moonshine using traditional pot still methods in a compact but efficient operation that reflects the island’s resilient, independent spirit. The distillery’s name pays homage to Texas’s rebellious nature and the long tail of flavor that good spirits leave behind. What started as weekend conversations about opening a small tasting room has evolved into a full production facility that’s become a cornerstone of Galveston’s growing craft beverage scene.
