ABOUT THIS DISTILLERY

Old Dance Hall Turned Bourbon Operation

Salvation Spirits sits on Highway 290 between Austin and Fredericksburg, in what used to be an old dance hall from the 1940s. Founders Tim Hargus and Zac Saucier opened the distillery in 2019, bringing together Hargus’s background in finance and Saucier’s experience in restaurant management. They’d been homebrewing and distilling as a hobby for years before deciding to turn their passion into a full-scale operation. The 6,000-square-foot space houses their custom copper still from Vendome Copper & Brass Works, along with a tasting room that keeps the rustic charm of the original dance hall with exposed beams and concrete floors. They focus on bourbon, rye whiskey, and vodka, with plans to expand into rum and gin. The operation is small but serious—they’re producing about 200 barrels per year and aging everything on-site in 53-gallon barrels. What started as weekend experimentation has become a legitimate player in the Texas Hill Country spirits scene, and they’re already gaining recognition for their wheated bourbon recipe.

WHAT SETS THEM APART

Wheated Bourbon in Texas Heat

The building itself tells half the story—this 1940s dance hall has hosted decades of Hill Country gatherings before becoming a distillery. But what really sets Salvation Spirits apart is their approach to wheated bourbon in Texas. While most Texas distilleries focus on high-rye mash bills, Hargus and Saucier went with a softer wheated recipe that’s unusual for the region. They’re also one of the few distilleries in the area doing everything in-house, from milling their own grain to bottling by hand. The climate-controlled aging room helps them manage the intense Texas heat that can over-age spirits quickly, and they’re experimenting with different char levels on their barrels to see how it affects the final product.

THE VISITOR EXPERIENCE

Taste Where People Used to Dance

You’ll taste in the same space where people danced decades ago, with the original hardwood floors and high ceilings intact. Tim or Zac usually handle tastings themselves, walking you through their production process and letting you sample straight from the barrel if timing’s right. The tasting room feels more like hanging out in someone’s workshop than a polished tourist destination—there’s equipment visible, barrels stacked nearby, and the smell of grain and wood throughout. Tours include seeing their mash tun, fermentation tanks, and the Vendome still, plus they’ll explain how they’re adapting traditional bourbon-making to Texas conditions. The whole experience takes about 45 minutes and feels genuinely educational rather than scripted.

IS IT WORTH VISITING

Real Distillers, Real Stories

If you’re driving the 290 corridor between Austin and Fredericksburg anyway, this makes a solid stop for anyone interested in the nuts and bolts of distilling. You won’t find the polished tourist experience of larger operations, but you’ll get authentic insight into how two guys turned a hobby into a business. The bourbon is genuinely good—smooth and approachable with that wheated character coming through. It’s better for people who want to learn about the process rather than those looking for a party atmosphere. The location means you can easily combine it with other Hill Country activities, and since they’re small, you’ll likely meet the actual distillers rather than hired staff.

⚠️ VISITING TIPS

Call ahead or check their Facebook page before driving out—they sometimes close for production work or private events without much notice. The GPS coordinates work fine, but look for the old dance hall building rather than fancy signage. Weekends tend to be busier, especially Saturday afternoons when they’re often running continuous tastings. Ask about their barrel program if you’re a bourbon collector—they occasionally offer single barrel purchases. Don’t expect a full bar setup; this is primarily a tasting operation focused on their own spirits. The drive from Austin takes about an hour, from Fredericksburg about 20 minutes, so plan accordingly.

FREQUENTLY ASKED QUESTIONS

Salvation Spirits Distillery — Visitor FAQ

Do I need to make a reservation for tastings?
Reservations aren’t required but they’re recommended, especially on weekends. Since Tim and Zac often handle tastings themselves, calling ahead ensures someone will be available when you arrive.
How long has Salvation Spirits been operating?
They opened in 2019, so they’re relatively new to the scene. The founders had been distilling as a hobby for several years before going commercial, and their whiskey has had time to age properly.
Can I buy bottles to take home?
Yes, they sell bottles on-site including their bourbon, rye, and vodka. Selection depends on what they have in stock, and since production is small-batch, availability can vary.
