ABOUT THIS DISTILLERY

Downtown Bend Distillery Built in Tech Precision

Oregon Spirit Distillers sits in downtown Bend’s historic district at 740 NE 1st Street, founded in 2009 by Brad Irwin, a former tech executive who traded Silicon Valley for small-batch spirits. The distillery operates out of a converted early 1900s building that once housed auto repair shops, and Irwin spent over two years navigating Oregon’s complex distillery licensing before opening his doors. They focus on vodka, gin, and whiskey, with their Clear Creek-inspired approach to using local ingredients whenever possible. The operation runs on a 300-gallon copper still that Irwin imported from Germany, and he’s built a reputation for methodical, small-batch production that prioritizes consistency over speed. What started as a one-man operation has grown into a team of four, but they’ve kept the same meticulous approach that defined those early batches. You’ll find them in the heart of Bend’s craft beverage scene, part of a cluster of breweries and distilleries that have made this area a destination for spirits enthusiasts. The tasting room feels more like a neighborhood bar than a tourist attraction, which seems to be exactly what Irwin intended when he designed the space.

WHAT SETS THEM APART

High Desert Juniper Hand-Harvested Botanicals

Oregon Spirit Distillers stands out for Irwin’s obsessive attention to water quality—he uses Bend’s mountain water but runs it through a custom filtration system he designed himself, claiming most distillers don’t pay enough attention to their base ingredient. Their gin uses juniper they harvest from Central Oregon’s high desert, giving it a distinctly different profile from coastal or imported botanicals. The whiskey program is still relatively young, but they’re aging in smaller barrels to accelerate the process while experimenting with different Oregon oak sources. Irwin’s background in technology shows up in his data-driven approach to distilling—he tracks every variable obsessively and has developed what he calls ‘recipe cards’ for each spirit that read more like engineering specs than traditional distillery notes.

THE VISITOR EXPERIENCE

Meet the Actual Distiller Behind the Bottles

The tasting room occupies the front portion of the distillery, separated from the production area by glass windows so you can watch the distilling process during visits. Irwin or one of his team members usually runs tastings personally, and they’re genuinely enthusiastic about explaining their processes rather than just pouring samples. You’ll taste through their core lineup while learning about their ingredient sourcing and production methods, and they encourage questions about the technical aspects that many distilleries gloss over. The space feels intimate—maybe a dozen people maximum—and visits feel more like hanging out with the distiller than formal tours. They pour generous samples and don’t rush you through the experience.

IS IT WORTH VISITING

For Spirits Nerds Absolutely Essential

This appeals most to spirits enthusiasts who appreciate the technical side of distilling and want to understand what goes into each bottle. If you’re looking for a polished, high-production experience, this isn’t it—but if you want to meet the actual distiller and taste spirits made by someone who can explain every decision that went into them, it’s worth the stop. The gin is genuinely distinctive thanks to those local botanicals, and watching Irwin’s enthusiasm for his craft is infectious. It’s not the most Instagram-worthy spot in Bend, but you’ll learn more about distilling here than at most larger operations. Perfect for spirits nerds, less ideal for casual tourists looking for entertainment value.

⚠️ VISITING TIPS

Call ahead or check their website before visiting since hours can be irregular when they’re in production mode. Parking is street parking in downtown Bend, which can be challenging during peak tourist seasons, so plan extra time. Ask specifically about their juniper harvesting process and their water filtration system—these are Irwin’s passion projects and where the conversation gets most interesting. If they’re distilling during your visit, ask to see the still in operation. The gin is their standout product, so start there if you’re short on time. They often have experimental batches available that aren’t part of the regular lineup, so ask what they’re working on.

FREQUENTLY ASKED QUESTIONS

Oregon Spirit Distillers — Visitor FAQ

What makes your gin different from other craft gins?
We hand-harvest juniper from Central Oregon’s high desert, which gives our gin a more resinous, earthy character than coastal or imported juniper. The high desert environment creates juniper with different oil profiles, and we combine this with our custom water filtration system for a distinctly regional gin.
Do I need to make a reservation for tastings?
Reservations aren’t required, but we recommend calling ahead since our hours can vary when we’re in production. The tasting room is small, so during busy periods you might have a short wait, but we prefer the intimate setting for better conversations about our spirits.
How long has the distillery been operating?
We opened in 2009 after founder Brad Irwin spent over two years navigating Oregon’s licensing requirements. We started as a one-person operation and have grown slowly and deliberately, focusing on perfecting our processes rather than rapid expansion.
