ABOUT THIS DISTILLERY

Engineer-Turned-Distiller In Cowboy Country

Territory Distilling sits on South Fern Street in Stillwater, Oklahoma, bringing craft spirits to the heart of Cowboy Country. Founded by husband-and-wife team Brad and Melissa Cockrell, this family operation launched in 2019 after years of perfecting their recipes and navigating Oklahoma’s evolving distillery laws. Brad, a former engineer, and Melissa, who handled the business side, transformed a 3,000-square-foot warehouse into a working distillery complete with custom copper stills and a welcoming tasting room. They produce bourbon, vodka, and rum using locally-sourced grains when possible, keeping batches intentionally small to maintain quality control. The Cockrells wanted to create something uniquely Oklahoman—spirits that reflect the state’s agricultural heritage and independent spirit. Their timing proved perfect, opening just as Oklahoma was loosening restrictions on distillery operations and direct-to-consumer sales. The operation remains decidedly hands-on, with Brad handling distillation while Melissa manages tastings and tours, giving visitors direct access to the people behind every bottle.

WHAT SETS THEM APART

Small Batches With Engineering Precision

Territory Distilling stands out as one of the few craft distilleries in the Stillwater area, filling a gap in Oklahoma’s spirits landscape outside of the major cities. The Cockrells’ engineering background shows in their methodical approach to distillation—Brad applies process optimization principles from his previous career to achieve consistency across batches. They’re also among the Oklahoma distilleries embracing the state’s agricultural resources, sourcing corn and wheat from local farms when harvest timing aligns. The operation runs on a 250-gallon copper still system that allows them to control every variable, from fermentation temperature to cut points. What really sets them apart is their willingness to experiment with different grain bills and aging techniques, treating each batch as a learning opportunity rather than rushing products to market.

THE VISITOR EXPERIENCE

No Corporate Polish Just Real Craft

Walking into Territory Distilling feels like visiting friends who happen to make whiskey in their garage—if that garage had professional copper stills and proper ventilation. The tasting room occupies the front of the warehouse space, with the production area visible behind glass, so you can watch mashing or distillation if you time your visit right. Brad or Melissa typically handle tastings personally, walking you through their current lineup and explaining how each spirit developed. The space smells like fermenting grain and oak, especially during production days. Tours are informal but thorough—you’ll see the grain mill, fermentation tanks, and stills up close while learning about their specific processes. The atmosphere is relaxed and educational rather than polished, with genuine enthusiasm for the craft evident in every conversation.

IS IT WORTH VISITING

Authentic Oklahoma Spirits Worth the Stop

Territory Distilling appeals most to spirits enthusiasts who appreciate small-scale operations and direct interaction with distillers. You won’t find the elaborate visitor centers or gift shops of larger operations, but you will get authentic insight into craft distilling from people who genuinely love what they do. The experience works particularly well for couples or small groups who enjoy intimate tastings and don’t mind a more industrial setting. If you’re passing through Stillwater or exploring Oklahoma’s emerging distillery scene, it’s definitely worth the stop. However, visitors expecting elaborate tours or extensive food pairings might find the experience too stripped-down. The value lies in the personal connection and education rather than entertainment.

⚠️ VISITING TIPS

Call ahead before visiting—Territory Distilling operates on a smaller schedule and may not always be open for walk-ins, especially during production periods. The warehouse location can be tricky to spot, so look for the Territory Distilling sign on the building rather than relying solely on GPS. Weekends typically offer the best chance to catch both Brad and Melissa on-site, though weekday visits during production can be more interesting if you want to see the stills in action. Ask about their aging experiments if you’re curious about their process—they’re usually happy to show barrel samples or discuss how different char levels affect flavor development. Parking is straightforward with space right in front of the building. The tasting room can get warm during summer months since it’s essentially a converted warehouse, so dress accordingly.
