ABOUT THIS DISTILLERY

A Nuclear Engineer Turned Master Distiller

Ironroot Republic Distilling sits on a 40-acre property in Denison, Texas, founded in 2014 by husband-and-wife team Robert and Marcia Likarish. Robert brought serious credentials to the operation—he’s a former nuclear engineer who turned his analytical mind toward perfecting bourbon and whiskey production. The distillery operates out of a custom-built facility where they focus on Texas-made spirits using locally-sourced grains and innovative aging techniques. The Likarishes didn’t stumble into distilling by accident. Robert spent years researching fermentation science and barrel aging before they committed to the business, even traveling to Scotland to study whiskey production firsthand. They launched with a clear philosophy: create spirits that reflect Texas terroir while respecting traditional methods. Marcia handles much of the business operations while Robert stays focused on production and recipe development. What you’ll find here is a working distillery that takes its craft seriously but doesn’t take itself too seriously. The facility includes their production area with custom copper stills, barrel storage, and a tasting room where you can sample their growing lineup of bourbon, rye, and experimental releases. They’ve built a reputation for innovation in aging—experimenting with different oak treatments and even using mesquite wood to add distinctly Texas flavors to their spirits.

WHAT SETS THEM APART

Texas Grain Meets Engineering Precision

Ironroot Republic stands out for their scientific approach to traditional whiskey making, thanks to Robert’s engineering background. They’re one of the few Texas distilleries using 100% Texas-grown corn, wheat, and rye, sourcing directly from farms within the state. Their aging program gets creative with different oak treatments and they’ve experimented with mesquite wood aging—something you won’t find at Kentucky distilleries. The facility includes climate-controlled aging areas alongside traditional warehouse aging, letting them manipulate how their spirits develop. They also produce their bourbon and rye at higher entry proofs than many craft distilleries, then proof down for bottling, which gives them more control over the final flavor profile.

THE VISITOR EXPERIENCE

Working Laboratory Where Science Meets Spirit

Tours take you through their production floor where you can see their custom copper pot stills and learn about their grain-to-glass process. Robert or other team members often lead tours personally, diving deep into the technical aspects of fermentation and distillation—expect to learn about mash bills, yeast strains, and why they make certain production choices. The tasting room feels more like a working laboratory than a polished showroom, with barrels and production equipment visible throughout. Tastings let you compare their different expressions side by side, and they’re usually pouring something experimental or barrel-proof that isn’t available elsewhere.

IS IT WORTH VISITING

For Serious Whiskey Students Absolutely Essential

If you’re serious about understanding how whiskey is made, this is absolutely worth the trip. Robert’s engineering background means you’ll get detailed explanations about the science behind distillation and aging that you won’t hear at tourist-focused distilleries. The spirits themselves are legitimately good—their bourbon and rye have won awards and gained respect in the craft whiskey community. However, if you’re looking for a polished, Instagram-ready experience with fancy architecture and elaborate gift shops, you might be disappointed. This is for people who care more about the liquid than the ambiance.

⚠️ VISITING TIPS

Call ahead or check their website for tour availability—they don’t always have set tour times and prefer to schedule around production. The distillery is about an hour north of Dallas, and GPS should get you there without issues, but it’s in a more rural area so don’t expect urban amenities nearby. Ask specifically about their barrel-proof releases and any mesquite-aged experiments they might have available for tasting. Robert loves talking technical details, so come with questions about their process if you want to get the most out of your visit. Weekend visits typically offer more flexibility for extended tastings and conversations.

FREQUENTLY ASKED QUESTIONS

Ironroot Republic Distilling — Visitor FAQ

Do I need to make a reservation for tours?
Yes, Ironroot Republic operates by appointment rather than set tour schedules. Call ahead or check their website to arrange your visit, especially since they’re a working distillery and production schedules can affect availability.
What makes their whiskey distinctly Texan?
They use 100% Texas-grown grains sourced directly from state farms, and they’ve experimented with mesquite wood aging to add distinctly regional flavors. The hot Texas climate also affects how their spirits age compared to Kentucky bourbon.
Can I buy bottles that aren’t available elsewhere?
Yes, they often have distillery-only releases, barrel-proof expressions, and experimental batches available for purchase on-site that you won’t find in retail stores. Selection varies based on current production and what they have ready for release.
