ABOUT THIS DISTILLERY

Durham Farm That Makes Its Own Whiskey

Mystic Farm & Distilling Company sits on a working farm along Stallings Road in Durham, where founders Sarah Dooley and Misty Kalkofen transformed agricultural land into North Carolina’s most ambitious craft distillery. Dooley, a former bartender turned entrepreneur, partnered with Kalkofen, a renowned Boston bartender and spirits writer, to open their doors in 2017. The 40-acre property houses both distillation facilities and farming operations that grow some of their own grain, creating a true farm-to-bottle operation that’s rare in North Carolina’s craft spirits scene. The journey started when Dooley decided to leave bartending and pursue distillation, spending years learning the craft before finding the perfect property in Durham. Kalkofen brought decades of bartending expertise and deep spirits knowledge to the partnership, helping design their production processes and visitor experience. They built their operation around a 500-gallon copper pot still and column still system, focusing on small-batch production that allows them to experiment with different grain bills and aging techniques. The team grows corn, wheat, and rye on-site when possible, supplementing with North Carolina farmers for consistent quality. Visitors find themselves on a working farm where the distillation process feels connected to the land around it. The tasting room overlooks the production floor, and you can often see Dooley or other team members working the stills during visits. The space feels more like a working farm than a polished tourist destination, which matches their philosophy of transparency in production. Tours walk through the entire grain-to-glass process, including visits to the rickhouse where barrels age in North Carolina’s humid climate, creating unique flavor profiles that develop faster than traditional bourbon regions.

WHAT SETS THEM APART

Grain to Glass From the Same Soil

Growing their own grain on the same property where they distill sets Mystic Farm apart from virtually every other North Carolina distillery. The 40-acre farm produces corn, wheat, and rye that goes directly into their mash bills, creating terroir-driven spirits that reflect Durham’s soil and climate. Kalkofen’s background as one of Boston’s most respected bartenders brings a cocktail-focused perspective to their spirit design, resulting in products specifically crafted to work well in mixed drinks alongside sipping neat. Their 500-gallon pot still allows for small-batch experimentation that larger operations can’t match, and they’ve embraced North Carolina’s accelerated aging environment to create complex flavors in shorter timeframes than traditional bourbon regions.

THE VISITOR EXPERIENCE

Working Farm First Tourist Trap Never

Tours start in the grain storage areas where you’ll see corn, wheat, and rye grown on the property, then move through the mashing and fermentation process with hands-on explanations from staff who actually work the equipment daily. The 500-gallon copper still dominates the production floor, and guides explain how they adjust cuts and techniques for different spirits throughout the week. Tastings happen in a rustic room overlooking the distillation area, where you’ll try their core lineup while learning how each spirit reflects their farm-to-bottle approach. The atmosphere feels authentic and unpretentious, more like visiting friends who happen to make excellent spirits than a corporate distillery experience.

IS IT WORTH VISITING

Real Craft Distilling Worth the Drive

If you’re interested in the actual craft of distillation and want to see a true farm-to-bottle operation, Mystic Farm delivers an experience you can’t find at larger distilleries. The combination of agricultural tourism and craft spirits appeals to visitors who want to understand where their whiskey starts before it hits the still. Don’t expect a polished corporate experience or elaborate cocktail programs, but do expect honest conversations about distillation, access to the people making the spirits, and products that taste distinctly North Carolinian. Spirits enthusiasts will appreciate the opportunity to taste how on-site grown grain affects flavor profiles, while casual visitors enjoy the working farm atmosphere.

⚠️ VISITING TIPS

Call ahead or check their website for current tour schedules since they operate on a smaller scale than corporate distilleries and may adjust hours for production needs. The farm setting means comfortable shoes and weather-appropriate clothing since parts of the tour happen outdoors. Ask about their grain growing process and how they adjust recipes based on what they harvest each season. Visit during weekdays if possible when you’re more likely to see active distillation. GPS works fine for the location, and parking is available on the property, though the gravel areas can get muddy after rain.

FREQUENTLY ASKED QUESTIONS

Mystic Farm & Distilling Company — Visitor FAQ

Do you really grow your own grain on-site?
Yes, they grow corn, wheat, and rye on the 40-acre property when conditions allow, supplementing with other North Carolina farmers during off years or for consistent supply. You’ll see the grain storage and can ask about current crops during tours.
How far in advance should I book a tour?
Since they operate on a smaller scale, booking at least a week ahead is recommended, especially for weekend visits. They sometimes adjust schedules for production needs, so calling ahead confirms availability.
What makes North Carolina aging different from Kentucky bourbon?
North Carolina’s humid climate and temperature swings create more barrel interaction than traditional bourbon regions, developing complex flavors faster than Kentucky’s more stable conditions. You’ll taste how this affects their whiskeys during the tasting portion.
