ABOUT THIS DISTILLERY

Desert Craft Distilling In an Industrial Workshop

Dry Point Distillers sits in an industrial complex in Las Cruces, New Mexico, where the desert heat actually works in their favor for aging spirits. Founded by husband-and-wife team Matt and Jennifer Salopek in 2018, this small operation started when Matt’s homebrewing hobby evolved into something bigger during his time as a software engineer. Jennifer brought business acumen from her corporate background, and together they decided to chase the dream of crafting spirits in the Land of Enchantment. The distillery operates out of a modest 2,000-square-foot space, where they produce vodka, gin, and whiskey using locally sourced ingredients when possible. Their 250-gallon copper still, affectionately named “Copper Betty,” handles all production in small batches that reflect the founders’ attention to detail. The space feels more like a workshop than a polished tasting room, which is exactly what Matt and Jennifer were going for—authentic, unpretentious, and focused on the craft rather than flashy presentation. You’ll find them working the equipment themselves most days, still very much hands-on owners who can walk you through every step of their process.

WHAT SETS THEM APART

Desert Heat That Ages Faster

What sets Dry Point apart is their commitment to working within New Mexico’s challenging climate rather than fighting it. The extreme temperature swings in the desert actually accelerate the aging process, allowing their whiskey to develop complexity faster than traditional aging environments. They’ve also embraced local ingredients, sourcing blue corn from nearby pueblos for some of their mash bills and experimenting with desert botanicals in their gin. Matt’s engineering background shows in their precise approach to distillation—he’s built custom monitoring systems to track every variable during production. The operation stays intentionally small, with most batches producing fewer than 50 bottles, which means you’re tasting something genuinely limited rather than mass-produced craft spirits.

THE VISITOR EXPERIENCE

No Tourist Polish Just Real Craft

Visiting Dry Point feels like stepping into someone’s garage workshop where serious experimentation happens. Matt or Jennifer will personally guide you through their compact operation, explaining how Copper Betty works and why they chose each piece of equipment. The tasting happens right at a small bar they built themselves, where you’ll sample their current lineup while hearing stories about failed batches and happy accidents that led to new recipes. The space smells like grain and copper, and you can hear the still working if you visit during production days. It’s intimate—groups are kept small because there’s literally not room for crowds—and you’ll leave feeling like you’ve met friends rather than completed a tourist activity.

IS IT WORTH VISITING

For Curious Spirits Worth the Hunt

This is for people who want to see craft distilling at its most authentic level. If you’re looking for Instagram-worthy spaces or polished presentations, you’ll be disappointed. But if you’re genuinely curious about how spirits are made and want to meet the people actually making them, Dry Point delivers something you can’t get at larger operations. The spirits themselves show real promise, especially considering how young the operation is. Whiskey enthusiasts will appreciate tasting something that’s developing its own regional character, and gin drinkers will find interesting botanical combinations you won’t find elsewhere. It’s worth the visit if you’re already in Las Cruces and want to support a local business that’s doing things the hard way.

⚠️ VISITING TIPS

Call ahead because they don’t keep regular public hours—this is still very much a working distillery first and tourist destination second. Weekend afternoons tend to work best for visits, but Matt and Jennifer are surprisingly flexible if you reach out. The location can be tricky to find since it’s tucked into an industrial area, so double-check the address and look for the small sign. Parking is easy once you find the place. Come with genuine questions about the process because both owners love talking shop, and you’ll get a much richer experience if you engage with the technical aspects. Don’t expect a lengthy tasting menu—they’ll share what’s ready and available, which varies based on production schedules.

FREQUENTLY ASKED QUESTIONS

Dry Point Distillers — Visitor FAQ

Do I need to make an appointment to visit?
Yes, absolutely call ahead. Matt and Jennifer don’t keep regular public hours since they’re focused on production, but they’re usually happy to schedule visits when they’re available.
How long does a typical visit last?
Plan on 45 minutes to an hour. The tour and tasting move at your pace, and if you’re genuinely interested in the technical aspects, they’ll spend more time explaining their process.
Can I buy bottles to take home?
Yes, they sell bottles on-site when inventory is available. Since batches are small, selection varies, so ask what’s currently ready when you visit.
