ABOUT THIS DISTILLERY

St Paul's First Legal Distillery Since Prohibition Era

King Coil Spirits opened in 2018 in St. Paul’s Vandalia Tower, bringing the first legal distillery to Minnesota’s capital city in nearly a century. Founded by Tom Schroeder, a former brewing industry executive, and his business partner who saw an opportunity to fill the craft spirits gap in the Twin Cities market. The distillery occupies a 3,000-square-foot space on the ground floor of the historic office building, where they installed a custom 500-gallon copper still from Vendome Copper & Brass Works. They focus on small-batch bourbon, rye whiskey, and gin, with plans to expand into rum and specialty spirits. The operation reflects Schroeder’s methodical approach to spirit making, emphasizing quality control and consistent flavor profiles over rapid expansion. King Coil’s name pays homage to the copper coils essential to distillation, while their branding maintains a clean, modern aesthetic that feels more like a craft brewery taproom than a traditional distillery. The space features exposed brick walls, industrial lighting, and large windows that let visitors watch the production process. You’re looking at a serious craft operation that’s building its reputation one batch at a time, with the founders often on-site to talk shop with visitors who appreciate the technical side of distilling.

WHAT SETS THEM APART

Urban Copper Still Operation In Historic Office Tower

King Coil holds the distinction of being St. Paul’s first legal distillery since Prohibition, which gives them genuine historical significance in the local spirits landscape. Their location in the Vandalia Tower puts them in an urban setting that’s unusual for Minnesota distilleries, most of which operate in rural areas or converted warehouses. Schroeder’s background in brewing brings a different perspective to whiskey making, particularly in his approach to fermentation and yeast management. The distillery uses a high-rye bourbon mash bill that produces a spicier profile than many craft distilleries attempt, and they’re aging their whiskey in 15-gallon barrels for faster maturation in Minnesota’s climate extremes.

THE VISITOR EXPERIENCE

Technical Tastings With The Distiller Himself

The tasting room feels intimate and industrial, with visitors gathering around a bar made from reclaimed wood while looking directly into the production area through large glass panels. Tom or his team lead tastings that focus heavily on the technical aspects of distillation, explaining how temperature control and cut points affect flavor development. The space can accommodate about 25 people comfortably, creating a cozy atmosphere where conversations with other visitors happen naturally. You’ll taste their current releases neat and in simple cocktails, with detailed explanations of mash bills and aging processes. The experience appeals most to spirits enthusiasts who want to understand the craft rather than casual drinkers looking for entertainment.

IS IT WORTH VISITING

Serious Spirits Enthusiasts Find Their Place

King Coil works best for serious spirits enthusiasts who appreciate technical discussions about distilling and want to support a local operation with genuine historical significance. You won’t find elaborate tours or flashy presentations, but you’ll get honest conversations about the challenges of craft distilling and taste spirits that reflect careful attention to detail. The location makes it easy to combine with other St. Paul activities, and the intimate setting means you’ll likely have meaningful interactions with the distilling team. However, if you’re looking for a party atmosphere or extensive food options, this isn’t your spot. The appeal here is authenticity and craftsmanship over entertainment value.

⚠️ VISITING TIPS

Call ahead or check their Facebook page for current hours, as they sometimes adjust for production schedules or private events. Parking can be tricky in the Vandalia Tower area, so plan to walk a block or two from street parking. Weekend afternoons tend to be busiest, while weekday visits offer more one-on-one time with the distilling team. Ask about their barrel aging program if you’re interested in the technical side, and don’t hesitate to inquire about upcoming releases. The tasting fee is reasonable and includes samples of everything they’re currently pouring. If you’re planning to buy bottles, they often have limited releases available only at the distillery.
