Industrial Warehouse That Makes Real Whiskey

NOLA Distillery sits on Tchoupitoulas Street in New Orleans’ Lower Garden District, housed in a converted warehouse that feels authentically industrial rather than polished tourist attraction. Founded in 2014 by James Karst, a former financial advisor who ditched Wall Street for whiskey barrels, this operation represents one of the first legal distilleries to open in New Orleans since Prohibition. Karst partnered with master distiller Todd Leopold (formerly of Leopold Bros. in Colorado) to create small-batch bourbon, rye, and gin using Louisiana ingredients wherever possible. The journey wasn’t smooth sailing. Karst spent nearly two years navigating New Orleans’ complex zoning laws and convincing city officials that a distillery could work in a residential-adjacent area. The 8,000-square-foot facility features a 500-gallon copper still imported from Germany, and they age their whiskey in new American oak barrels stored in Louisiana’s punishing heat and humidity. Their head distiller, Sarah Martinez, came from Sazerac and brings serious credibility to their bourbon program. When you visit, you’re walking through working production space where they’re actually making spirits, not a Disney version of a distillery. The tasting room feels like an extension of the warehouse rather than a separate experience, with concrete floors, exposed beams, and the constant smell of fermenting grain. They produce about 1,200 bottles per month, focusing on bourbon and rye that shows Louisiana terroir through local corn and the aggressive aging climate that accelerates maturation.

NOLA Distillery is one of only three legal distilleries operating in New Orleans proper, and they’re using Louisiana’s brutal summer heat as a feature rather than fighting it. Their bourbon ages faster and develops more complex flavors in 18 months than many Kentucky bourbons do in three years, thanks to warehouse temperatures that regularly hit 110°F. They source corn from Acadiana farms within 100 miles of the distillery and use water filtered through New Orleans’ unique underground aquifer system. Master distiller Sarah Martinez developed their signature mash bill specifically for Louisiana aging conditions, with a higher rye content that holds up better to aggressive barrel interaction.

Working Distillery Not Tourist Theater

Tours happen in the actual production space where Sarah or one of her assistants walks you through their mashing, fermentation, and distillation process while it’s happening. You’ll see the 500-gallon German copper still in action (if you visit during production days) and get to stick your nose into fermenting mash tanks that smell like bread dough and alcohol. The warehouse tour includes climbing up to check barrel samples, and Sarah pulls whiskey directly from barrels for you to taste at different proof levels. The tasting room portion covers their core lineup plus whatever experimental batches they’re working on.

Serious Whiskey Education Worth the Trip

If you’re serious about understanding how climate affects whiskey aging, this is worth your time. You’ll taste young bourbon that drinks like it’s much older, and Sarah knows her stuff when explaining the science behind accelerated aging. It’s not the most polished visitor experience in New Orleans, but that’s actually the point – you’re seeing real production rather than a show. Casual drinkers might prefer more tourist-friendly options, but whiskey nerds and anyone interested in local ingredients and terroir will find plenty to discuss. The small scale means you’re getting personal attention rather than being herded through with 20 other people.

⚠️ VISITING TIPS

Book tours at least a week ahead through their website since they only run them Thursday through Saturday and group sizes max out at eight people. Production happens Tuesday through Thursday, so visit then if you want to see distillation in action. Parking is street parking only and can be tight on weekends, but there’s usually space within a block. Ask Sarah about their barrel-proof samples – she’ll often pull something special if you show genuine interest in the process. Don’t expect a fancy gift shop; they sell bottles directly but selection is limited to current production. The neighborhood is safe during daylight hours but use normal city precautions after dark.

Our warehouse temperatures hit 110°F regularly in summer, which accelerates aging significantly. Our 18-month bourbon develops complexity that takes Kentucky distilleries three years to achieve. The extreme temperature swings also create more aggressive barrel interaction, pulling more oak flavors faster.
Do you actually distill on-site or just bottle?
We handle the entire process from grain to bottle on Tchoupitoulas Street. We mash, ferment, distill, age, and bottle everything here using our 500-gallon German copper still. Production happens Tuesday through Thursday if you want to see distillation in action.
What Louisiana ingredients do you use?
We source corn from farms within 100 miles in Acadiana and use New Orleans aquifer water that’s been naturally filtered underground. Our mash bills are designed specifically for Louisiana’s aggressive aging climate rather than copying traditional Kentucky recipes.
