ABOUT THIS DISTILLERY

Industrial Space That Makes Liquid Art

What if Distillery sits in an industrial complex off Airline Highway in Baton Rouge, where founders Blake Melancon and Ryan Comeaux turned a simple question into Louisiana’s newest craft distillery. These two Louisiana natives, both with backgrounds in the oil and gas industry, started asking “what if” they could create premium spirits that captured the essence of their home state. They opened their doors in 2019 after spending years perfecting their recipes and navigating the complex world of distillery licensing. The facility houses a custom 500-gallon copper pot still along with smaller experimental equipment, where they focus on small-batch bourbon, rum, and flavored spirits that reflect Louisiana’s unique culinary culture. What started as weekend experimentation in Melancon’s garage has evolved into a legitimate operation producing several thousand bottles annually, with plans for significant expansion as demand grows.

WHAT SETS THEM APART

Louisiana Rice in Bourbon Changes Everything

What if Distillery stands out by incorporating distinctly Louisiana ingredients and techniques into their spirits production. They source local sugarcane for their rum production and experiment with Louisiana rice in some of their bourbon mash bills, creating flavors you won’t find in Kentucky or Tennessee. The founders’ oil and gas backgrounds brought an engineer’s precision to their distilling process, resulting in incredibly consistent quality control and innovative approaches to fermentation timing. They’re also one of the few Louisiana distilleries focusing heavily on flavored spirits that actually complement rather than mask the base spirit, using real ingredients like local honey and pecans instead of artificial flavoring.

THE VISITOR EXPERIENCE

Garage Hangout Vibes Real Deal Energy

Tours at What if Distillery feel more like hanging out in a friend’s well-equipped garage than a corporate experience. Blake or Ryan typically lead visitors through the production area themselves, explaining their equipment choices and letting you smell the mash bills during different fermentation stages. The tasting room occupies a corner of the production facility, so you’ll hear the stills working and catch the sweet aroma of fermenting grains throughout your visit. Tastings include their core spirits plus whatever experimental batches they’re willing to share, and both founders genuinely enjoy talking shop about the technical aspects of distilling. The whole experience feels intimate and authentic, partly because you’re often talking directly to the people who made the spirits you’re sampling.

IS IT WORTH VISITING

Two Engineers Turned Distillers Worth the Drive

If you’re interested in the craft distilling process and enjoy meeting passionate entrepreneurs, What if Distillery delivers an experience you can’t get at larger operations. The founders’ enthusiasm is infectious, and you’ll learn more about the technical side of distilling here than at most tourist-focused distilleries. However, this isn’t the place for elaborate gift shops or polished experiences—it’s a working distillery first and foremost. Bourbon purists might find their Louisiana-influenced approach interesting rather than traditional, while rum drinkers will appreciate their sugarcane spirits. The intimate setting means you’ll get personal attention, but call ahead since production schedules can affect availability for impromptu visits.

⚠️ VISITING TIPS

Call before you visit since Blake and Ryan often handle tours personally around their production schedule. The distillery shares space in an industrial complex, so GPS will get you to the general area but look for suite 4F specifically. Weekends tend to work better for tours since they’re not managing active distillation. Ask about their experimental batches if you’re interested in tasting something unique—they’re usually working on several small-batch experiments. Parking is available in the shared lot, and the industrial location means easy access from Airline Highway. Don’t expect a fancy tasting room experience, but do expect to learn something new about craft distilling from people who genuinely love what they’re doing.

FREQUENTLY ASKED QUESTIONS

What if Distillery — Visitor FAQ

Do I need to make a reservation to visit?
Yes, definitely call ahead since Blake and Ryan often handle tours personally around their production schedule. They want to make sure someone’s available to show you around properly rather than having you arrive when they’re busy with distillation.
What makes your bourbon different from Kentucky bourbon?
We incorporate Louisiana rice into our mash bill alongside traditional corn and wheat, which creates a slightly sweeter, softer profile. The rice adds a unique character you won’t find in traditional bourbon regions, and we think it reflects Louisiana’s agricultural heritage.
How long are your tours and what do they include?
Tours typically run 45 minutes to an hour, depending on how many questions you have. You’ll see our entire production setup, learn about our ingredient choices, and end with a tasting of our core spirits plus any experimental batches we’re willing to share.
