Log Still Distillery sits on a working farm along Dee Head Road in New Haven, Kentucky, about 30 minutes south of Louisville. Founded by Tim and Pam Smith in 2013, this family operation started as a retirement project that grew into something much bigger. Tim spent decades in manufacturing while Pam worked in healthcare, but they’d always dreamed of doing something together on their 40-acre property. The distillery operates out of a converted barn that the Smiths renovated themselves, complete with a custom-built copper still they sourced from Kentucky.
The Smiths didn’t jump into distilling blindly. Tim spent two years learning the craft, studying under local distillers and perfecting recipes in small batches before they ever opened to the public. They focus on traditional bourbon and moonshine, using a mash bill that includes corn grown right on their farm. Pam handles the business side while Tim runs production, and they’ve kept things intentionally small-scale. Their 500-gallon copper pot still produces about 20 barrels per month when they’re running full tilt.
What you’ll find here is the real deal—a working farm distillery where the owners are usually on-site and genuinely excited to share what they’ve built. The tasting room overlooks the farm, and you can often see cattle grazing in the distance while you sample their spirits. It’s not fancy or polished, but that’s exactly the point. The Smiths have created something authentic in an industry that’s increasingly corporate.
