ABOUT THIS DISTILLERY

Tierra Distilling Co. & Cafe sits on Burlington Avenue in Clarendon Hills, bringing craft spirits and Latin-inspired cocktails to the western suburbs of Chicago. Founded by husband-and-wife team Miguel and Patricia Perez in 2018, this isn’t your typical American whiskey operation—they’re making agave spirits, rum, and vodka with techniques Miguel learned growing up in Jalisco, Mexico. The 3,000-square-foot space combines a working distillery with a full cafe and cocktail bar, housed in a converted commercial building that they gutted and rebuilt themselves over two years. Miguel handles production on a 500-liter copper still he imported from Mexico, while Patricia runs the front of house and develops the food menu that bridges Mexican flavors with Midwestern ingredients. The name “Tierra” means earth in Spanish, reflecting their commitment to using local grains and traditional fermentation methods that Miguel’s grandfather taught him. They opened just as craft distilling was taking off in Illinois, becoming one of the few Latino-owned distilleries in the state and the first in DuPage County to focus primarily on agave-based spirits. The cafe serves as both tasting room and neighborhood gathering spot, with regular live music and community events that have made it a local fixture. You’ll find everything from their signature blanco tequila to coffee cocktails made with their own vanilla-infused rum, all in a space that feels more like a friend’s kitchen than a corporate tasting room.

WHAT SETS THEM APART

This is one of the few distilleries outside of Mexico making authentic tequila-style spirits using traditional tahona wheel crushing and wild fermentation techniques that Miguel learned from his family’s mezcal operation in Jalisco. They source blue agave directly from Jalisco and ferment it using native yeasts, then distill in small batches on copper stills designed specifically for agave spirits. The combination distillery-cafe format is rare in the craft spirits world—you can watch production happening while enjoying house-made tamales and coffee drinks spiked with their spirits. Miguel’s background as a mechanical engineer shows in the custom fermentation tanks he designed to maintain precise temperature control for agave fermentation, and Patricia’s culinary training brings restaurant-quality food to what could have been just another tasting room.

THE VISITOR EXPERIENCE

You’ll walk into a bright, open space where the copper still dominates one wall and cafe tables fill the rest, with the smell of roasting coffee mixing with agave fermentation. Miguel or one of his assistants usually runs tastings at the bar, explaining how their agave spirits differ from typical American whiskey and why they chose traditional Mexican methods. The tasting flight includes their blanco, reposado, and seasonal rum, with Patricia often pairing small plates that complement each spirit—think mole with the reposado or tres leches with the vanilla rum. Tours happen on weekends and take you through their fermentation room where you can see the tahona wheel in action and learn about wild yeast cultivation. The vibe is relaxed and educational rather than formal, with regulars dropping in for coffee and newcomers getting drawn into conversations about terroir in agave spirits.

IS IT WORTH VISITING

If you’re tired of the same bourbon-and-rye circuit, this place offers something genuinely different in the Chicago area craft spirits scene. The agave spirits are legitimately well-made—Miguel knows what he’s doing, and the traditional methods show in the complexity of the final products. The cafe aspect means you can make a proper afternoon of it rather than just a quick tasting, and the food actually enhances the spirits rather than just soaking up alcohol. It’s perfect for anyone curious about tequila and mezcal production or looking for a more intimate distillery experience. Don’t expect massive production tours or corporate polish—this is small-scale and personal, which some visitors love and others find underwhelming if they want the full industrial distillery experience.

⚠️ VISITING TIPS

Call ahead for weekend tours since they only run them when Miguel’s available and not in production mode. The GPS can be tricky since Burlington Avenue has several commercial strips—look for the hand-painted sign and the agave plants Patricia keeps by the front door. Come hungry since the food is genuinely good and pairs well with the spirits, especially the weekend brunch menu. Ask Miguel about the tahona wheel process if you get a chance—he loves explaining the traditional methods and how they affect flavor development. Avoid busy weekend evenings if you want to actually talk with the staff about production, since the cocktail crowd can get pretty thick. Their seasonal releases usually drop in spring and fall, so check their social media if you’re interested in limited bottlings.

FREQUENTLY ASKED QUESTIONS

Tierra Distilling Co. & Cafe — Visitor FAQ

Do you actually make tequila or agave spirits?
They make agave spirits using traditional tequila methods and 100% blue agave from Jalisco, but can’t legally call it tequila since it’s not made in the designated Mexican regions. The process and flavor profile are authentic to traditional tequila production.
Can I see the tahona wheel in action?
The tahona wheel operates during production runs, typically midweek. Weekend visitors might see it stationary, but Miguel explains how it works during tours. Call ahead if seeing it in operation is important to your visit.
Is the food necessary or can I just do spirits?
The food isn’t required, but Patricia designs the menu specifically to pair with their spirits, and the cafe atmosphere is part of the experience. You can absolutely just do tastings and bottle purchases if you prefer to focus on spirits only.
