Papa’s Pilar Distillery sits right on Duval Street in Key West, occupying a prime spot at 201 Simonton Street in the heart of the island’s historic district. Founded by Ernest Hemingway’s son Patrick and grandson Michael, the distillery opened in 2014 as a tribute to Papa Hemingway himself—Papa’s Pilar being the name of his beloved fishing boat. The operation blends imported rums from different Caribbean islands and ages them further in their Key West facility, creating what they call “distilled in Key West” spirits rather than traditional grain-to-glass production.
The Hemingway family partnered with master blender Paul Senft to create rums that honor Ernest’s love affair with the spirit during his Key West years from 1928 to 1940. Senft brings decades of experience from his work with premium rum brands, and he’s built Papa’s Pilar around a solera aging system—relatively rare in American rum production. The distillery sources rums from Barbados, Dominican Republic, Venezuela, and Panama, then finishes them in various barrels including bourbon, rye, and sherry casks in their Key West rickhouse.
Visitors get a chance to see where Hemingway lived and worked, since the distillery sits just blocks from his former home. The tasting room doubles as a cocktail bar serving classic daiquiris and mojitos alongside flights of their aged rums. It’s part distillery tour, part Hemingway pilgrimage, and part high-end rum bar rolled into one distinctly Key West experience.
