ABOUT THIS DISTILLERY

Papa’s Pilar Distillery sits right on Duval Street in Key West, occupying a prime spot at 201 Simonton Street in the heart of the island’s historic district. Founded by Ernest Hemingway’s son Patrick and grandson Michael, the distillery opened in 2014 as a tribute to Papa Hemingway himself—Papa’s Pilar being the name of his beloved fishing boat. The operation blends imported rums from different Caribbean islands and ages them further in their Key West facility, creating what they call “distilled in Key West” spirits rather than traditional grain-to-glass production. The Hemingway family partnered with master blender Paul Senft to create rums that honor Ernest’s love affair with the spirit during his Key West years from 1928 to 1940. Senft brings decades of experience from his work with premium rum brands, and he’s built Papa’s Pilar around a solera aging system—relatively rare in American rum production. The distillery sources rums from Barbados, Dominican Republic, Venezuela, and Panama, then finishes them in various barrels including bourbon, rye, and sherry casks in their Key West rickhouse. Visitors get a chance to see where Hemingway lived and worked, since the distillery sits just blocks from his former home. The tasting room doubles as a cocktail bar serving classic daiquiris and mojitos alongside flights of their aged rums. It’s part distillery tour, part Hemingway pilgrimage, and part high-end rum bar rolled into one distinctly Key West experience.

WHAT SETS THEM APART

This is the only distillery in the continental U.S. using a true solera aging system for rum production, where they blend rums of different ages in a pyramid of barrels that’s never fully emptied. The Hemingway family connection isn’t just marketing—Patrick and Michael Hemingway are actively involved, and they’ve filled the space with authentic memorabilia from Ernest’s Key West years. The location itself is significant, sitting in the same neighborhood where Hemingway penned “A Farewell to Arms” and “For Whom the Bell Tolls.” Rather than making rum from scratch, they’re doing something more like what cognac houses do—sourcing exceptional base spirits from traditional Caribbean producers and applying their own aging and blending expertise in the subtropical Key West climate.

THE VISITOR EXPERIENCE

You’ll walk into a space that feels more like an upscale rum bar than a traditional distillery, with dark wood, vintage photos, and Hemingway memorabilia covering the walls. The tours focus on their solera system and blending process rather than fermentation and distillation, since the heavy lifting happens at their Caribbean partner distilleries. You can watch them working with the barrels and taste rums at different stages of the solera process. The real highlight is the tasting room experience afterward—their bartenders know how to make a proper daiquiri the way Papa would have drunk it, and you can sample their aged expressions neat or in classic cocktails.

IS IT WORTH VISITING

If you’re a rum enthusiast or Hemingway fan, this is absolutely worth your time. The solera system demonstration is genuinely educational, and you’ll taste rums you can’t find anywhere else. Bourbon drinkers might be less impressed since this isn’t traditional American whiskey territory, but the barrel-finishing program produces some complex spirits that bridge the gap. Casual tourists will enjoy the Hemingway stories and cocktails, though hardcore distillery geeks looking for grain-to-glass production should set different expectations. The location makes it an easy stop while exploring Key West’s historic district, and the cocktail program means you can easily spend a couple hours here.

⚠️ VISITING TIPS

Book tours online ahead of time, especially during Key West’s busy winter season from December through April. The distillery is right downtown, so parking can be tricky—consider walking or biking if you’re staying in Old Town. Tours run several times daily, but the last one usually wraps by 5 PM. Try the Papa’s Pilar Dark alongside their White rum to understand their blending philosophy, and don’t skip their take on a classic daiquiri if cocktails are your thing. The gift shop has bottles you can’t buy elsewhere, including some distillery-exclusive releases. If you’re doing multiple Key West distillery visits, this pairs well with Legal Rum since they represent completely different approaches to rum making.

FREQUENTLY ASKED QUESTIONS

Hemingway Distillery — Visitor FAQ

Do you actually distill rum on-site or just age it?
They source rum from partner distilleries in the Caribbean and focus on blending and aging in their Key West facility using a solera system. It’s more like what a cognac house does—sourcing excellent base spirits and applying their own aging and blending expertise.
What’s the connection to Ernest Hemingway?
The distillery was founded by Hemingway’s son Patrick and grandson Michael. Papa’s Pilar was the name of Ernest’s fishing boat, and the distillery sits in the same Key West neighborhood where he lived and wrote from 1928 to 1940.
Is parking available downtown?
There’s no dedicated parking lot, and street parking in Old Town Key West can be challenging, especially during peak tourist season. Walking, biking, or using rideshare from your hotel is often easier than driving.
