ABOUT THIS DISTILLERY

Spirit Hound Distillers sits along the Ute Highway in Lyons, Colorado, a small town wedged between the foothills and the plains about 20 minutes north of Boulder. Craig and Kathy Engelhorn founded this farm distillery in 2012, bringing together Craig’s engineering background and their shared vision of creating spirits using locally-sourced Colorado ingredients. The operation runs out of a 6,000-square-foot facility that houses their custom-built German copper still alongside fermentation tanks and aging barrels. They focus on whiskey, gin, and vodka, with most of their grains coming from farms within 150 miles of the distillery. The Engelhorns didn’t just want to make spirits—they wanted to create a complete grain-to-glass operation that showcases Colorado’s agricultural potential. Craig’s methodical engineering approach shows up in every aspect of production, from the precise temperature controls during fermentation to the detailed tracking of each barrel’s development. The distillery opened its doors to visitors in 2013, offering a chance to see the entire process from milling grain to bottling finished spirits.

WHAT SETS THEM APART

Spirit Hound operates as one of Colorado’s true farm distilleries, sourcing wheat, corn, and rye from farms within a 150-mile radius and milling everything on-site. Their 500-liter German copper still was custom-designed for their specific production needs, allowing them to maintain precise control over cuts and flavor development. The Engelhorns age their whiskey in new American oak barrels in Colorado’s dramatic climate swings, which accelerate the aging process compared to traditional bourbon regions. Craig’s engineering background brings a scientific precision to traditional distilling methods, with detailed documentation of every batch and variable. They’re also one of the few distilleries in the region that offers a complete grain-to-glass experience, where you can literally see grain being milled and follow it through every step to the finished bottle.

THE VISITOR EXPERIENCE

Tours at Spirit Hound feel intimate and educational, typically led by Craig himself or other knowledgeable staff who can explain both the science and artistry behind each step. You’ll start at the grain bins and mill, then move through fermentation tanks where you can smell the active yeast working, before reaching their gleaming copper still. The tasting room occupies part of the production facility, so you’re surrounded by the actual distilling operation rather than a separate retail space. Tastings include their core lineup of spirits with detailed explanations of how Colorado’s ingredients and climate influence each product. The atmosphere is relaxed and welcoming, with the Engelhorns treating visitors more like friends stopping by their workshop than customers on a formal tour.

IS IT WORTH VISITING

If you’re interested in the technical side of distilling or want to understand how local ingredients translate into finished spirits, Spirit Hound delivers an experience you won’t find at larger operations. The intimate scale means you get genuine interaction with the people making the spirits, not just a rehearsed presentation. It’s particularly appealing to visitors who appreciate the farm-to-table movement and want to see that philosophy applied to distilling. The location in Lyons also makes it easy to combine with other Front Range activities like hiking or brewery visits in Boulder. However, if you’re looking for a polished tourist experience with extensive food options or elaborate facilities, you might find it too low-key. The real draw here is learning about craft distilling from people who genuinely love what they’re doing.

⚠️ VISITING TIPS

Call ahead or check their website before visiting, as hours can vary seasonally and they sometimes close for private events or production needs. The distillery is easy to find on Ute Highway, but GPS can be a bit unreliable in the area, so look for their sign on the building. Tours typically run on weekends, but they can sometimes accommodate weekday visits with advance notice. Ask Craig about the specific farms where their grains come from—he knows the farmers personally and loves sharing those connections. If you’re planning to buy bottles, bring cash as they don’t always have card processing available. The facility isn’t heated extensively, so dress appropriately if you’re visiting in winter months.

FREQUENTLY ASKED QUESTIONS

Spirit Hound Distillers — Visitor FAQ

Do you really source all your grains locally?
Yes, they source corn, wheat, and rye from farms within 150 miles of the distillery and mill everything on-site. Craig knows many of the farmers personally and can tell you exactly where specific grains come from.
How does Colorado’s climate affect the aging process?
Colorado’s dramatic temperature swings cause the barrels to expand and contract more than in traditional bourbon regions, which accelerates the aging process. The low humidity also affects evaporation rates, creating different flavor development patterns.
Can I tour without an appointment?
While they welcome drop-ins when possible, it’s best to call ahead or check their website since hours can vary seasonally. They sometimes close for production work or private events, so advance contact ensures you won’t make the trip for nothing.
