Denver Distillery sits on South Broadway in Denver’s Baker neighborhood, occupying a converted warehouse space that feels more like a neighborhood hangout than a formal distillery. Founded in 2019 by owner and distiller Sam Seymour, this operation focuses on small-batch whiskey and gin production using traditional copper pot stills. Seymour, who previously worked in craft brewing, made the jump to distilling after years of experimenting with home fermentation and wanting to create something uniquely Colorado. The 3,000-square-foot facility houses both production and a tasting room where visitors can sample spirits while watching the distillation process through large windows. They produce bourbon, rye whiskey, and a botanical gin that incorporates Colorado-grown ingredients. The space maintains an industrial feel with exposed brick, concrete floors, and the copper stills as the centerpiece, but comfortable seating areas and local artwork give it a welcoming vibe. What started as Seymour’s passion project has grown into a legitimate neighborhood destination, though they’ve kept the intimate scale that makes conversations with the distiller himself a regular part of the experience.
