ABOUT THIS DISTILLERY

Savage & Cooke sits on Mare Island in Vallejo, inside a massive 1918 naval warehouse that once stored munitions for World War I. Founded by Dave Phinney—the wine industry maverick behind The Prisoner Wine Company—this distillery opened in 2018 after Phinney decided to pivot from wine to whiskey. The 25,000-square-foot space houses custom copper stills from Germany and feels more like an industrial cathedral than your typical distillery, with soaring ceilings and thick concrete walls that keep temperatures steady year-round. They’re producing bourbon, rye, and American whiskey while also aging sourced spirits in their unique maritime environment. Phinney’s journey here wasn’t typical—he sold his wine empire and wanted to build something entirely different. He partnered with master distiller Michael Jessen, who brings serious credentials from his time at Kentucky bourbon houses. The Mare Island location wasn’t random either; they needed massive space for their ambitious aging program and found it in this former naval facility that sat empty for decades. The maritime climate creates different aging conditions than traditional Kentucky rickhouses, with cool, humid air flowing off San Pablo Bay. They’re not trying to replicate Kentucky bourbon—they’re creating something distinctly Northern California. Visitors walk through production areas where you can see the 42-foot-tall column still and hybrid pot stills working. The tasting room occupies part of the old naval warehouse, and you’re drinking spirits surrounded by thousands of barrels aging in the same space where sailors once loaded ammunition. Tours show off their grain-to-glass operation, from milling corn and wheat to bottling. The whole operation feels like controlled chaos—industrial and sophisticated at the same time, which matches Phinney’s approach to just about everything.

WHAT SETS THEM APART

The maritime aging environment sets Savage & Cooke apart from landlocked distilleries. Their spirits mature in the cool, humid air flowing off San Pablo Bay, creating different flavor development than the hot-cold cycles of traditional bourbon country. The facility itself is genuinely historic—this 1918 naval warehouse stored munitions during both world wars and sat abandoned until Phinney transformed it into a distillery. They’re also running an unusual business model, producing their own spirits while simultaneously aging and blending sourced whiskeys, giving them products to sell while their own distillate matures. The German-made copper stills are custom-designed for their specific recipes, and the sheer scale of the operation is impressive for a craft distillery.

THE VISITOR EXPERIENCE

You’ll start in the production area where guides explain their grain-to-glass process while massive copper stills tower overhead. The warehouse setting is dramatic—thick concrete walls, soaring ceilings, and the constant presence of aging barrels stacked around the tasting room. Tours cover their milling, fermentation, distillation, and aging processes, with guides who understand the technical details and can explain how maritime aging affects flavor development. The tasting happens right in the barrel warehouse, so you’re surrounded by thousands of aging barrels while sampling their bourbon, rye, and American whiskey. The industrial setting isn’t for everyone, but it’s memorable—you definitely won’t forget drinking whiskey in a former munitions depot.

IS IT WORTH VISITING

If you’re into whiskey production and want to see something different from typical Kentucky distillery tours, absolutely. The scale and setting are impressive, and the maritime aging story is legitimate, not marketing fluff. Wine enthusiasts familiar with Dave Phinney’s reputation will appreciate seeing his approach to distilling. However, if you prefer quaint, rustic distillery experiences, this industrial setting might feel too sterile. The spirits are solid but still developing their identity—they’re not going to blow away bourbon veterans, but they’re interesting expressions of Northern California whiskey making. The historical setting and unique aging environment make it worth the trip to Mare Island, especially if you’re already exploring Napa Valley.

⚠️ VISITING TIPS

Book ahead online since they limit tour sizes and weekend slots fill up quickly. Mare Island can be tricky to navigate—use their exact address in GPS and follow signs once you’re on the island. Weekend afternoons are busiest, so weekday visits offer more personal attention from guides. Ask about their aging program differences compared to Kentucky, and try their bourbon alongside their rye to taste how the maritime climate affects different grain bills. The warehouse can be cool even on warm days, so bring a light jacket. Parking is plentiful right outside the facility, and the drive onto Mare Island itself is part of the experience—you’ll pass other historic naval buildings that give context to the area’s military history.

FREQUENTLY ASKED QUESTIONS

Savage & Cooke – An American Distillery — Visitor FAQ

What’s different about maritime aging?
The cool, humid air from San Pablo Bay creates more consistent temperatures and higher humidity than traditional bourbon aging regions. This affects how the spirits interact with barrel wood, creating different flavor development patterns than the extreme temperature swings of Kentucky summers and winters.
Is this the same Dave Phinney from The Prisoner wine?
Yes, Dave Phinney sold The Prisoner Wine Company and founded Savage & Cooke as his next venture. He brought the same innovative, rules-breaking approach from wine to whiskey production, including unique blending techniques and marketing strategies.
Do you make your own whiskey or just age sourced spirits?
Both—they distill their own spirits from grain while also aging and blending sourced whiskeys in their maritime environment. This gives them products to sell while their own distillate ages, and creates opportunities for unique blending projects between house-made and sourced spirits.
