ABOUT THIS DISTILLERY

Owens Valley Distilling Company sits in Bishop, California, right where the Sierra Nevada meets the high desert at 4,150 feet elevation. Founded by husband-and-wife team John and Michelle Ziegler, this small-batch operation launched in 2019 after years of planning and navigating California’s complex distillery licensing process. John brings a background in engineering while Michelle handles the business side, and together they’ve created something pretty unique in the Eastern Sierra. The distillery occupies a modest industrial space on South Street, but don’t let the unassuming exterior fool you. Inside, they’re running a 250-gallon copper still from Vendome Copper & Brass Works, the same company that builds stills for Kentucky’s biggest names. They focus primarily on whiskey, using locally-sourced grains when possible and taking advantage of the dramatic temperature swings that come with high-altitude desert life. Those daily temperature fluctuations actually accelerate the aging process, pulling more flavor from the barrels faster than you’d see at sea level. What started as John’s hobby during retirement quickly became a serious operation when friends kept asking where they could buy bottles. The Zieglers realized Bishop needed something beyond the typical tourist stops, and they were right. You’re looking at hand-bottled spirits with a distinctly Eastern Sierra character, aged in full-size barrels despite the small production runs. It’s the kind of place where you can actually talk to the people who made what you’re drinking.

WHAT SETS THEM APART

The elevation here does something special to whiskey aging that most distilleries can’t replicate. At over 4,000 feet, Bishop sees temperature swings of 40+ degrees between day and night, especially in winter. This constant expansion and contraction pushes the whiskey deeper into the barrel wood and back out again, creating more interaction in two years than some distilleries get in four. The Zieglers aren’t just taking advantage of accident geography either—they’re actively experimenting with different barrel chars and toast levels to see how they interact with the climate. Plus, they’re one of the few distilleries using Sierra Nevada snowmelt water, which is naturally soft and mineral-light, letting the grain and barrel flavors really shine through without competing minerals.

THE VISITOR EXPERIENCE

This isn’t a polished corporate tasting room—you’re literally walking into their production facility where John or Michelle will likely be the one pouring your samples. The space smells like grain and oak, with the copper still dominating one corner and barrels aging along the walls. Tastings happen at a simple bar setup where you can watch them bottling or moving barrels while you sip. They’ll walk you through their entire process, from grain to bottle, and John especially loves talking about how the altitude affects aging. The whole experience feels more like visiting friends who happen to make really good whiskey than a formal tour.

IS IT WORTH VISITING

If you’re driving through the Eastern Sierra and appreciate small-batch spirits, absolutely stop by. This appeals most to whiskey enthusiasts who want to taste something genuinely different and talk to the actual distillers. Don’t expect elaborate tours or fancy amenities—you’re getting authenticity over polish. The whiskey genuinely tastes different thanks to the elevation, so even experienced drinkers will find something new here. It’s also perfect for anyone curious about the craft distilling process since you can see the entire operation in one room and ask questions without feeling rushed.

⚠️ VISITING TIPS

Call ahead since they don’t keep regular retail hours—this is still very much a working distillery first. John and Michelle are usually there during weekdays, but weekends can be hit or miss depending on production schedules. Don’t rely on GPS entirely; look for the industrial complex on South Street near the railroad tracks. Parking is easy in their lot. Ask about their barrel aging experiments if you visit—they’re always trying something new and love sharing the results. Bring cash for bottle purchases since they don’t always have card processing set up.

FREQUENTLY ASKED QUESTIONS

Owens Valley Distilling Company — Visitor FAQ

Do I need to make an appointment to visit?
Yes, definitely call ahead since this is primarily a production facility. John and Michelle are usually there during weekdays but their schedule varies with production needs.
How does the high altitude affect the whiskey?
At over 4,000 feet elevation, Bishop’s extreme temperature swings cause more barrel interaction than typical aging environments. The whiskey expands and contracts more dramatically, pulling deeper flavors from the wood in less time.
What can I buy to take home?
They offer bottle sales of their current whiskey releases, all hand-bottled on site. Selection varies based on what’s ready, so call ahead if you’re looking for something specific.
