ABOUT THIS DISTILLERY

Arizona Distilling Co. sits on West Main Street in downtown Mesa, founded in 2014 by Jon Winch, a former software engineer who traded coding for copper stills. Winch spent years researching distillation techniques and Arizona’s distilling regulations before opening what became one of the state’s pioneering craft distilleries. The operation focuses on small-batch bourbon, rye whiskey, and vodka, using a combination of traditional methods and modern equipment in their compact but efficient facility. Winch’s journey into distilling started as a home hobby that grew into an obsession with perfecting grain-to-glass spirits. He sources corn and wheat from Arizona farms when possible, emphasizing local ingredients in a state not known for whiskey production. The distillery operates with a hands-on approach, with Winch still involved in daily production decisions and recipe development. Their commitment to quality over quantity shows in their limited production runs and attention to detail in every batch. Visitors find a working distillery where production takes center stage. The tasting room offers a direct view into the distillation process, and you’ll often catch Winch or his team working the stills during business hours. It’s not a polished tourist destination but rather an authentic look at craft distilling in the desert Southwest, where the dry climate creates unique aging conditions for their whiskey barrels.

WHAT SETS THEM APART

Arizona Distilling Co. stands out as one of the few distilleries successfully making bourbon in the Sonoran Desert, where extreme temperature swings accelerate the aging process. The dry heat and dramatic day-to-night temperature variations mean their whiskey develops character faster than traditional bourbon regions, allowing them to achieve complexity in shorter aging periods. Winch’s software engineering background shows in his methodical approach to recipe development and quality control, bringing precision to traditional distilling methods. Their commitment to using Arizona-grown grains when available also sets them apart in a state where most distilleries rely entirely on sourced ingredients.

THE VISITOR EXPERIENCE

The tasting room feels like stepping into an active workshop rather than a polished showroom. You’ll hear the bubbling of fermentation tanks and see the copper still at work during production hours. Tastings are intimate affairs, often led by Winch himself or knowledgeable staff who can explain the technical aspects of desert distilling. The space is compact but functional, with concrete floors and exposed equipment creating an industrial vibe. You can actually watch the entire grain-to-glass process if you time your visit during production days.

IS IT WORTH VISITING

If you’re curious about how whiskey develops in desert conditions or want to meet a distiller who’s genuinely passionate about the science behind spirits, Arizona Distilling Co. delivers. It’s perfect for whiskey enthusiasts who prefer authentic, behind-the-scenes experiences over polished tourist attractions. Don’t expect elaborate tours or fancy tasting rooms—this is about the spirits and the process. Casual visitors might find it too focused on production details, but anyone interested in craft distilling will appreciate the hands-on approach and Winch’s willingness to share his knowledge.

⚠️ VISITING TIPS

Call ahead to check if they’re distilling during your visit—watching the actual process is the highlight. The tasting room is small, so groups larger than six should definitely make reservations. Ask Winch about how Arizona’s climate affects aging if he’s around—he loves talking about the technical aspects. Park on the street or in nearby downtown Mesa lots. Weekend visits are more relaxed for conversation, while weekdays offer better chances to see production in action. Try their bourbon alongside spirits from traditional regions to taste the difference desert aging makes.

FREQUENTLY ASKED QUESTIONS

Arizona Distilling Co. — Visitor FAQ

How does Arizona’s climate affect your whiskey aging?
The extreme temperature swings and dry heat accelerate the aging process significantly. Our whiskey develops complexity faster than traditional bourbon regions, with the desert climate forcing more interaction between spirit and wood. What might take 4-6 years elsewhere can happen in 2-3 years here.
Can I watch the distillation process during my visit?
Yes, if you visit during production hours you’ll see the stills in action. Call ahead to check the distillation schedule since we don’t run the stills every day. The tasting room overlooks the production area, so you’re always seeing the working distillery.
Do you use Arizona-grown grains in your whiskey?
We source Arizona corn and wheat when available, though consistent supply can be challenging in the desert. Jon works with local farmers when possible, but we also use quality grains from traditional growing regions to maintain consistency in our recipes.
