What Makes a Craft Distillery?

The American Craft Spirits Association defines a craft distiller as one producing fewer than 750,000 proof gallons annually and holding an ownership stake of at least 51%. But for most enthusiasts, craft means something more: attention to ingredient sourcing, hands-on production, and a genuine relationship between maker and spirit.
