Ashlynn Distillery operates out of a compact space on Bridge Street in Morrisville, Pennsylvania, right along the Delaware River between Trenton and Philadelphia. Founded by Mike and Kelly Ashlynn, this small-batch operation opened in 2017 after Mike spent years perfecting his recipes in his garage. The couple converted a former automotive shop into their production facility, installing a custom 500-gallon copper still from Kentucky alongside fermentation tanks and a small tasting room. They focus primarily on bourbon and rye whiskey, though they also produce vodka and seasonal spirits.
Mike’s background in engineering shows in his methodical approach to distilling – he tracks every variable from grain moisture to fermentation temperature in detailed spreadsheets. Kelly handles the business side and developed their cocktail menu, drawing on her bartending experience from Philadelphia. The transition from weekend hobby to full-time distillery took three years of navigating Pennsylvania’s liquor laws and convincing Morrisville officials that a distillery would benefit the small borough. Visitors step into what feels more like a working garage than a polished tasting room, which is exactly the vibe the Ashlynns were going for. You can watch the entire production process from one spot since everything happens in the same 2,500 square foot space. The tasting room holds maybe a dozen people comfortably, with high-top tables made from reclaimed wood and Mason jar lighting. Mike often runs tastings himself, explaining how Pennsylvania’s corn and local water affect flavor profiles, while Kelly crafts cocktails that showcase their spirits without masking the whiskey character.
