ABOUT THIS DISTILLERY

Milwaukee's First Craft Distillery Since Prohibition

Central Standard Crafthouse & Kitchen sits in Milwaukee’s Historic Third Ward at 320 E Clybourn Street, occupying a beautifully restored brick building that captures the neighborhood’s industrial heritage. Founded by Ryan Castelaz in 2013, this operation started as Milwaukee’s first craft distillery since Prohibition, born from Castelaz’s vision to bring small-batch spirits production back to a city with deep brewing roots. The 8,000-square-foot space houses both the distillery operations and a full-service restaurant, creating a unique combination of craft spirits production and elevated dining under exposed brick ceilings and industrial fixtures. They produce a focused lineup of spirits including bourbon, rye whiskey, gin, and vodka, with all distillation happening on-site using custom copper pot stills. The restaurant side features Executive Chef who creates dishes designed to pair with their house-made spirits, while the bar program showcases cocktails built around their own products. The space maintains the authentic feel of Milwaukee’s manufacturing past while serving as a modern gathering place where you can watch spirits being made through floor-to-ceiling windows that separate the dining area from the production floor. What started as one person’s dream to revive Milwaukee’s distilling tradition has grown into a neighborhood institution that bridges the gap between the city’s brewing heritage and its craft spirits future.

WHAT SETS THEM APART

Restaurant and Distillery Under One Roof

Central Standard stands apart as Milwaukee’s pioneer in the post-Prohibition craft distilling renaissance, being the first operation to bring spirits production back to a city that had been defined by beer for over a century. The integration model sets them apart from most craft distilleries—rather than just offering tours and tastings, they’ve built a full-service restaurant and bar program where every cocktail can showcase their house-made spirits in real time. Their location in the Historic Third Ward puts them at the heart of Milwaukee’s most vibrant neighborhood, housed in a restored industrial building that tells the story of the city’s manufacturing heritage. The production philosophy focuses on grain-to-glass control with locally-sourced ingredients when possible, and their small-batch approach means they can experiment with different mash bills and aging techniques that larger operations can’t accommodate. The restaurant component isn’t just an add-on—it’s designed specifically to highlight how their spirits work in both classic and innovative cocktails, with a chef who understands the flavor profiles of each product.

THE VISITOR EXPERIENCE

Watch Spirits Being Made While You Eat

You’ll walk into a space that immediately shows you both sides of the operation—the working distillery visible through large windows on one side, and the bustling restaurant and bar on the other. The atmosphere blends industrial authenticity with modern comfort, featuring exposed brick walls, polished concrete floors, and the gentle hum of distillery equipment in the background. Tours are available and typically led by knowledgeable staff who can explain their grain-to-glass process while you watch the copper stills in action. The tasting experience happens at the bar where you can sample their spirits neat or in carefully crafted cocktails that demonstrate each product’s characteristics. The restaurant elevates the experience beyond typical distillery fare, with dishes designed to complement their spirits and an extensive cocktail menu that serves as a masterclass in how their products perform in mixed drinks. The space gets lively during dinner service and weekend evenings, creating an energetic atmosphere that’s part production facility, part neighborhood gathering place.

IS IT WORTH VISITING

Beyond Beer in Brew City

This is perfect for people who want to understand craft distilling without sacrificing dining quality or cocktail expertise. If you’re interested in how a distillery can integrate into urban life rather than existing as a rural destination, Central Standard offers a compelling model. The combination of production, education, and hospitality makes it worth visiting even if you’re not a spirits enthusiast—the restaurant stands on its own merits. It’s particularly valuable for those curious about Milwaukee’s beverage culture beyond beer, and the Historic Third Ward location means you can easily combine it with other attractions in the area. However, this isn’t the place for an intimate, quiet tasting experience—it’s a working restaurant and bar that happens to make its own spirits. The urban setting means no scenic views or pastoral charm, but what you get instead is authentic integration of craft production with daily neighborhood life.

⚠️ VISITING TIPS

Make dinner reservations if you want to experience both the food and spirits together, especially on weekends when the restaurant gets busy. Tours don’t always run on a fixed schedule, so call ahead if seeing the production process is important to you. The bar area is usually more accessible for walk-ins if you just want to try their spirits, and the bartenders are knowledgeable about explaining the differences between their products. Parking in the Historic Third Ward can be challenging during peak times, but there are several paid lots within walking distance. The lunch service tends to be less crowded if you prefer a quieter experience where you can better hear the distillery operations. Ask specifically about any limited releases or barrel-aged experiments they might have available for tasting, as these often don’t make it to the regular menu but showcase their production capabilities.
