ABOUT THIS DISTILLERY

Clean Science Meets Craft Precision

Simplicity Spirits Co. sits in an industrial section of Salt Lake City, founded by Jason Barrett in 2014 with a straightforward mission: make clean, quality spirits without unnecessary complexity. Barrett, who previously worked in the tech industry, got into distilling after years of home brewing and a fascination with the science behind fermentation and distillation. The operation runs out of a 6,000-square-foot warehouse space that houses their custom-built hybrid pot and column still, along with tasting rooms and production areas they’ve built out themselves over the years. Barrett’s approach centers on using high-quality ingredients and precise distillation techniques rather than flashy marketing or elaborate aging processes. They focus primarily on vodka and gin production, with their vodka going through a seven-stage distillation process using locally-sourced wheat. The gin follows a vapor-basket method that infuses botanicals during distillation rather than steeping them afterward. What started as a one-man operation has grown into a small team, though Barrett remains hands-on with every batch and personally manages most tours and tastings. Visitors get an up-close look at their production process in a space that feels more like a working lab than a polished tourist destination. You’ll see the mash tanks, the still in action, and Barrett’s meticulous quality control setup. The tasting room has a clean, modern feel with concrete floors and industrial lighting, but it’s warm enough for conversation. They’ve built a solid local following among cocktail enthusiasts who appreciate the technical precision behind spirits that taste exactly like what they’re supposed to be.

WHAT SETS THEM APART

Seven Stages of Vodka Perfection

Barrett’s background in technology shows up in his obsessive attention to consistency and precision. While many craft distilleries focus on aged spirits or unique flavor profiles, Simplicity takes the opposite approach—they want their vodka to be the cleanest possible expression of the base ingredients, and their gin to showcase botanical balance without any single element overpowering the others. Their seven-stage distillation process for vodka is more intensive than most craft operations, and Barrett monitors every batch with laboratory-grade testing equipment. In Utah’s tightly regulated spirits market, they’ve also become one of the few local distilleries focusing entirely on clear spirits, which means you can actually taste their craftsmanship immediately rather than waiting years for barrel aging to work its magic.

THE VISITOR EXPERIENCE

No Scripts Just Real Talk

Barrett usually runs tours himself, and you’ll quickly realize this guy knows his science. He’ll walk you through each step of their process, from grain selection to the final filtration stages, explaining the chemistry behind flavor development in terms that make sense without dumbing it down. The tour includes seeing their mash tanks, the custom still setup, and their bottling area, plus you’ll get to smell the difference between each distillation cut. Tastings happen at a simple bar setup where Barrett pours samples and explains what you’re tasting—he’s genuinely interested in your feedback and will adjust the conversation based on whether you’re a spirits novice or someone who geeks out about proof points and botanical ratios.

IS IT WORTH VISITING

For Spirits Nerds Absolutely Essential

This is perfect for people who want to understand the technical side of distilling without getting overwhelmed by corporate tour scripts or heritage stories. If you’re curious about how vodka and gin actually get made, or if you appreciate spirits that prioritize craftsmanship over marketing, you’ll enjoy the straightforward approach here. Barrett’s passion for the process is genuine, and you’ll leave understanding why consistency is actually much harder to achieve than most people realize. It’s not the place for Instagram-worthy barrel rooms or elaborate cocktail experiences, but if you want to taste truly well-made spirits and talk shop with someone who knows what they’re doing, it’s worth the trip.

⚠️ VISITING TIPS

Call ahead to schedule visits since Barrett often runs tours solo and needs to work around production schedules. The location can be tricky to find—it’s in an industrial area without much signage, so double-check the address before heading over. Saturday afternoons tend to work best for longer conversations since production usually wraps up by then. If you’re into cocktails, ask Barrett about his recommendations for mixing ratios with their gin—he’s spent considerable time working with local bartenders and has strong opinions about what works. Parking is easy with plenty of space in front of the building.

FREQUENTLY ASKED QUESTIONS

Simplicity Spirits Co. — Visitor FAQ

Do I need to book tours in advance?
Yes, definitely call ahead since Jason often runs tours personally and needs to schedule around production. He prefers to keep groups small for better conversation, so advance booking ensures you get a spot and proper attention during your visit.
What makes your vodka different from mass-produced brands?
We use a seven-stage distillation process with locally-sourced wheat and monitor every batch with laboratory-grade equipment for consistency. The goal is achieving the cleanest possible expression of the grain character rather than filtering out everything that makes it interesting.
Can I buy bottles to take home?
Yes, we sell bottles on-site of both our vodka and gin. Jason can also recommend mixing ratios and cocktail recipes that work particularly well with our spirits if you’re planning to use them at home.
