ABOUT THIS DISTILLERY

Historic Ice Plant Turned Craft Distillery

Tucked into a historic brick building at 437 E South St in downtown Wooster, Minglewood Distilling Co & The Ice Plant occupies what was once the Minglewood Coal and Ice Company, an industrial operation that supplied the city with coal and ice from the 1880s through the 1950s before the building eventually sat vacant. Founded in 2015 by a father-son team, Andy Morrison and his father Mark, Minglewood is the only distillery currently operating in Wayne County. Andy’s father brings a background in machining and metalwork to the operation, and rather than buying equipment off the shelf, he built the distillery’s still and fermenter by hand, along with much of the store’s fixtures. Minglewood produces bourbon, rye, wheat whiskey, gin, and vodka, all distilled from grain grown exclusively in Wayne County, Ohio. In a departure from most craft distilleries, none of their whiskeys use malted barley in the mashbill, a choice driven by the simple fact that Wayne County farmers plant barley almost exclusively as a cover crop rather than a harvested grain. Everything Minglewood bottles is single barrel, poured straight from the barrel and proofed down with water rather than batched or blended for consistency, with select cask-strength releases bottled as-is. The rehabbed space still carries traces of its industrial past, including original cork insulation visible in the still room, a holdover from the building’s days as a working ice plant. Minglewood distills seasonally, running stills from November through April, and ages spirits in a three-story, steam-heated rickhouse where barrels are actively rotated throughout the aging process. The distillery also hosts an annual barrel signing event, inviting participants to select and sign a barrel, return each year to taste its progress, and vote alongside other signers on when it’s ready for bottling. Those who sign get first access to purchase the bottle once it’s released. Beyond the tasting room, Minglewood operates The Ice Plant, an on-site event space used for weddings, corporate events, and live music.

WHAT SETS THEM APART

Original Industrial Machinery Still on Display

The building’s history as Wooster’s original coal and ice plant gives this distillery a genuine connection to the city’s industrial past. Rather than gutting the space, the rehab preserved some of the original character, including cork insulation still visible on the walls of the still room, a holdover from the building’s days storing ice. The location puts Minglewood squarely in downtown Wooster, making it one of the more walkable distillery visits in the state compared to the drive-out-to-farmland experience craft distilleries often require. The tasting room and bottle shop sit apart from the working distillery in back, and Andy or another team member will walk visitors through the still room and rickhouse on request, giving guests a genuine look at the production side rather than just a polished front-of-house experience.

Working Stills Meet Century-Old Brick

Walking in, you’re greeted at a bar and bottle shop up front, with merchandise and bottles on display and a relaxed seating area to work through a flight. It’s a straightforward, welcoming tasting room rather than a themed experience, though the building’s industrial bones and exposed brick are a constant reminder of what the space used to be. Andy or one of the tasting room staff will walk you through the current lineup, and if Andy’s around, he’s been known to personally take visitors on a “nickel tour” of the still room and rickhouse in back. The atmosphere is casual and conversational rather than a formal tour, the kind of place where you’ll pick up the building’s history and the distilling process naturally, just by asking questions over a pour.

IS IT WORTH VISITING

Downtown Walkable Distillery Experience

Minglewood is worth the stop for craft bourbon and rye drinkers who appreciate single barrel spirits and want to see a distillery built around genuinely local grain. It’s not really a spot for families, and dedicated bottle collectors may find the lineup more interesting for its story than for chasing rare releases. Where it really shines is for young professionals, cocktail enthusiasts, and anyone planning an event, the on-site Ice Plant venue hosts weddings, corporate events, and live music, and it’s a legitimately good space for it. Casual visitors exploring downtown Wooster for the first time should make time for it too. The downtown location means you can easily pair a visit with the rest of what Wooster’s doing right now, restaurants, shops, and a Saturday farmers market among them, for a full afternoon out.

⚠️ VISITING TIPS

Minglewood is only open Friday and Saturday, so plan your visit around that rather than a weekday stop. Downtown Wooster is easy to navigate on foot, with street parking nearby, and pairing your visit with lunch or a walk through the rest of downtown makes for an easy afternoon. If you’re building a flight, don’t sleep on the bottled in bond offerings or the single barrel releases, all five pours we tried were genuinely good, including the rye, which isn’t always a given at craft distilleries. If Andy’s around, ask about the building’s history as the old Minglewood Coal and Ice Company and how his father built the still and fermenter by hand, it’s one of the best stories behind any distillery we’ve visited.
