Solas Distillery opened in 2019 in La Vista, Nebraska, founded by husband-and-wife team Matt and Sarah Kumm. Matt, a former software engineer, and Sarah, who worked in marketing, decided to pursue their passion for craft spirits after years of home distilling as a hobby. They chose the name ‘Solas,’ which means ‘light’ in Gaelic, to represent bringing light and craft spirits to the Omaha metro area. The distillery operates out of a modern industrial space on Centennial Road, featuring a custom-built still and tasting room where they produce vodka, gin, and whiskey. What started as weekend experiments in their garage has grown into Nebraska’s newest craft distillery, focusing on small-batch production and locally-sourced ingredients whenever possible.
