ABOUT THIS DISTILLERY

Twin Cities Warehouse Turned Whiskey Lab

Copperwing Distillery sits in a converted warehouse space on Cambridge Street in St Louis Park, where founders Matt Voge and Alex Rude turned their homebrewing passion into something stronger in 2018. These guys spent years perfecting their craft before going commercial, and you can taste the difference that obsessive attention to detail makes. The 3,000-square-foot facility houses custom copper stills and fermentation tanks, where they’re producing small-batch bourbon, rye, and gin with a focus on locally-sourced ingredients whenever possible. Voge brings a background in food science while Rude handles the business side, though both get their hands dirty in production. They started with a 250-gallon copper pot still and have gradually expanded their capacity as demand grew. The operation reflects their philosophy of controlled growth—they’d rather make less and get it right than rush to market with mediocre spirits. Their bourbon uses a high-rye mash bill that gives it more spice than typical Minnesota offerings. The tasting room feels industrial but welcoming, with exposed brick and steel beams that remind you this used to be a working warehouse. You’ll taste spirits while watching actual production through glass windows, and the staff genuinely knows the process inside and out. It’s not the fanciest operation you’ll visit, but the spirits speak for themselves, and there’s something refreshing about a place that lets the product do the talking rather than relying on flashy marketing.

WHAT SETS THEM APART

High-Rye Everything From Patient Perfectionists

Copperwing stands out for their methodical approach to recipe development and their commitment to aging spirits properly rather than rushing them to market. While many craft distilleries rely on sourced whiskey or young spirits, they’ve been patient enough to let their bourbon age three-plus years before releasing it. Their high-rye bourbon mash bill creates a spicier profile than most Minnesota distilleries attempt, and they use a combination of new and used barrels to develop complexity. The founders’ food science background shows up in their precise fermentation control and consistent flavor profiles batch to batch.

THE VISITOR EXPERIENCE

Working Distillery First Tasting Room Second

You’ll tour the production floor where Matt or Alex often lead tastings themselves, explaining their process from grain to bottle. The space smells like fermenting grain and oak, with the sounds of actual production happening around you. Tastings happen at a simple bar setup where you can try their current releases while asking questions about their techniques. The atmosphere is relaxed and educational rather than polished—you’re visiting a working distillery first and a tasting room second. Tours typically run 45 minutes and include samples of whatever they currently have available.

IS IT WORTH VISITING

Real Craft Without the Show

If you appreciate craft distilling done thoughtfully rather than flashily, Copperwing delivers. The spirits are legitimately good, especially their aged bourbon, and you’ll leave understanding more about the distilling process than when you arrived. It appeals most to spirits enthusiasts who want to taste the difference proper aging and recipe development make. Don’t expect elaborate cocktails or fancy food—this is about the spirits themselves. The founders’ genuine passion for the craft comes through, making it worth a stop for anyone serious about understanding Minnesota’s distilling scene.

⚠️ VISITING TIPS

Call ahead or check their social media for current hours and availability, as production schedules can affect tasting room operations. Parking is available on-site, though the Cambridge Street location can be tricky to spot—look for industrial buildings rather than flashy signage. Ask about their barrel aging program and mash bill specifics if you’re into the technical side of distilling. They often have limited releases available that aren’t widely distributed, so it’s worth asking what’s exclusive to the tasting room. Weekend visits tend to be less rushed if you want more detailed conversations about their process.

FREQUENTLY ASKED QUESTIONS
