ABOUT THIS DISTILLERY

Historic Rope Factory Turned Spirit Sanctuary

Dirty Water Distillery sits in Plymouth’s historic Cordage Park, a former rope manufacturing complex that dates back to the 1800s. Founded by brothers Mike and Dave Souza in 2015, this Massachusetts distillery takes its name from the Standells’ 1966 hit “Dirty Water” – a classic Boston anthem. The Souza brothers, who grew up in Plymouth and worked in construction and hospitality respectively, decided to turn their homebrew hobby into something bigger after years of experimenting with spirits in their garage. They converted a 4,000 square foot industrial space in Bay 2 of the historic Cordage Park into a working distillery and tasting room. The journey wasn’t smooth sailing. It took the brothers nearly three years to navigate Massachusetts’ complex distillery licensing process, but they were determined to bring craft spirits production back to Plymouth – a town more famous for pilgrims than gin. Mike handles the production side with their 500-gallon copper still, while Dave manages the business operations and cocktail program. They focus primarily on gin and vodka, using a vapor basket infusion method that lets them experiment with botanicals sourced from local farms when possible. Visitors walk into an industrial-chic space where you can see the entire operation – there’s no hiding the process behind fancy walls here. The tasting room feels like an extension of the production floor, with exposed brick, steel beams, and the copper still as the centerpiece. You’re not just tasting spirits; you’re watching them being made. The atmosphere is laid-back and unpretentious, exactly what you’d expect from two brothers who decided to chase a dream in their hometown.

WHAT SETS THEM APART

Vapor Basket Infusion Changes Everything

Dirty Water is one of the few distilleries operating inside a registered historic district, and the Cordage Park location gives it serious industrial character that you won’t find in converted barns or purpose-built facilities. The brothers use a vapor basket infusion method for their gin that’s less common than traditional botanical steeping – it creates cleaner, brighter flavors by passing vapor through the botanicals rather than boiling them directly. They’re also one of the smaller operations you’ll visit, with that 500-gallon still producing just enough to keep the tasting room stocked and a few local bars supplied. The scale means Mike can experiment with small batches and seasonal botanicals in ways larger operations simply can’t.

THE VISITOR EXPERIENCE

Production Floor Tastings No Pretense Allowed

You’ll taste right where the action happens – the production floor doubles as the tasting room, so you’re literally standing next to the still while sampling their spirits. Mike or Dave usually handle tastings themselves, walking you through their process and letting you smell the botanicals they use in their gin. The space has a working distillery vibe with concrete floors and industrial lighting, but they’ve made it comfortable with a few high-top tables and bar seating. Tastings are casual and educational – they want you to understand what makes vapor basket infusion different, and they’re happy to talk shop about the challenges of small-batch production.

IS IT WORTH VISITING

Real Deal Distilling Worth Finding

If you appreciate craft spirits and want to see a truly small operation in action, absolutely. This isn’t a polished tourist experience – it’s two brothers making spirits in an old rope factory, and that authenticity is exactly the appeal. Gin lovers will especially appreciate tasting the difference their vapor basket method makes. However, if you’re looking for elaborate tours, gift shops full of merchandise, or food service, you’ll be disappointed. This is a production-focused visit where the spirits and the process are the main attractions. It’s perfect for spirits enthusiasts who want to support local craft distilling and don’t need all the bells and whistles.

⚠️ VISITING TIPS

Call ahead or check their Facebook page before visiting – hours can be limited and they sometimes close for production days or private events. The Cordage Park location can be tricky to find since it’s a large complex with multiple buildings and bays, so look for the Bay 2 signage and park near the loading docks. Saturday afternoons tend to be the best time to catch both brothers working, and they’re most relaxed about longer conversations then. Ask about their seasonal botanical experiments if you visit during summer or fall – they often have small test batches that aren’t part of the regular lineup. Don’t expect a long formal tour since the entire operation is visible from the tasting area.

FREQUENTLY ASKED QUESTIONS

Dirty Water Distillery — Visitor FAQ

What’s the vapor basket method and how does it affect the gin?
Instead of boiling botanicals directly in the spirit, they use a basket that holds the botanicals above the liquid. The alcohol vapor passes through the basket, picking up flavors without the harsh or bitter notes you can get from direct boiling. It creates a cleaner, brighter gin with more pronounced citrus characteristics.
How hard is it to find the distillery in Cordage Park?
The complex is large and can be confusing since it’s multiple connected buildings. Look for Bay 2 signage and park near the loading dock area. The distillery entrance is clearly marked once you’re in the right section, but first-time visitors often drive around the complex a few times.
Do I need to make a reservation for tastings?
Not usually, but calling ahead is smart since they’re a small operation. Sometimes they close for production days or private events without much advance notice on their website. Their Facebook page is the most reliable place to check current hours and availability.
