ABOUT THIS DISTILLERY

Industrial Warehouse Where Maine Meets Caribbean

The Northern Maine Distilling Company sits in an industrial stretch of Brewer, Maine, just across the Penobscot River from Bangor. Founded in 2015 by Josh Doughten and Ryan Hennessey, two Maine natives who left corporate careers to chase their distilling dreams, this small-batch operation produces rum, gin, and vodka in a converted warehouse space. The distillery started as a weekend project between friends who were homebrewing and experimenting with distillation, eventually growing into Maine’s first rum-focused craft distillery. Doughten, who worked in marketing, and Hennessey, an engineer, spent two years perfecting their recipes and navigating Maine’s licensing requirements before opening their doors. They installed a 350-gallon copper still system and focused on creating spirits that reflect Maine’s character – particularly their signature rum made with Maine maple syrup and local ingredients. The operation remains deliberately small, with the founders handling most of the production themselves alongside a small team of part-time helpers. Visitors find a working distillery that prioritizes production over polish. The tasting room occupies one corner of the warehouse space, where you can sample their spirits while watching the distillation process happen just feet away. The atmosphere is unpretentious and educational, with Doughten or Hennessey often personally leading tastings and explaining their process. You’re tasting spirits from people who can tell you exactly how each batch was made because they made it themselves.

WHAT SETS THEM APART

New England's Only Maple Rum Makers

Northern Maine Distilling Company stands out as one of the few rum-focused craft distilleries in New England, which is unusual geography for rum production. Their signature approach involves incorporating Maine maple syrup directly into their rum production process, creating a distinctly regional twist on Caribbean-style spirits. The founders’ engineering background shows in their precise approach to distillation – they track and adjust their cuts with scientific precision while maintaining small batch sizes that rarely exceed 200 bottles per run. Operating as a true two-person operation in an industrial setting, they’ve maintained complete control over every aspect of production from grain to bottle.

THE VISITOR EXPERIENCE

Two Founders in Their Working Laboratory

You’ll taste spirits directly in the production space, surrounded by fermentation tanks and the copper still system. Josh or Ryan typically handle tastings themselves, walking you through their process while production continues around you. The experience feels more like visiting friends in their workshop than a formal tasting room – expect to learn about specific gravity readings, cut points, and the challenges of rum production in Maine’s climate. Tastings include their core lineup with detailed explanations of how each spirit reflects their philosophy of precise small-batch production.

IS IT WORTH VISITING

For Rum Nerds Absolutely Essential

This appeals most to spirits enthusiasts who want to understand the technical side of craft distilling and don’t need polished presentation. You’ll get direct access to the founders and genuine insight into small-scale production challenges and solutions. It’s perfect for rum lovers curious about American rum production and anyone interested in the business side of starting a craft distillery. Don’t expect elaborate facilities or extensive cocktail menus – you’re here for education and tasting quality small-batch spirits in their birthplace.

⚠️ VISITING TIPS

Call ahead since they operate with limited hours and sometimes close for production needs. The distillery is in an industrial area that GPS sometimes struggles with – look for the Baker Boulevard industrial complex and call if you can’t locate the entrance. Weekend visits often offer the best chance to meet both founders, and they’re most talkative during slower periods. Ask about their maple rum production process and the challenges of rum aging in Maine’s temperature swings. Bring cash for bottle purchases since they don’t always have card processing available.

FREQUENTLY ASKED QUESTIONS

The Northern Maine Distilling Company — Visitor FAQ

Do I need to make an appointment to visit?
Yes, definitely call ahead. Josh and Ryan often work production schedules that conflict with drop-in visitors, and they want to give you proper attention during tastings. Weekend appointments usually work best for longer conversations about their process.
What makes your rum different from other craft distilleries?
They incorporate Maine maple syrup directly into the rum production process, not just as flavoring. This creates a unique American rum style that reflects Maine’s agricultural character. Their engineering backgrounds also mean they approach distillation with scientific precision while maintaining small batch sizes.
Can I buy bottles directly from the distillery?
Yes, they sell bottles on-site and often have limited releases available only at the distillery. Bring cash since card processing isn’t always available. They’ll sometimes have experimental batches available for purchase that you won’t find in stores.
