ABOUT THIS DISTILLERY

Historic Valley Junction Meets Modern Distilling

The Foundry Distilling Company sits in the historic Valley Junction district of West Des Moines, occupying a renovated building that fits perfectly with the area’s restored early 1900s architecture. Founded by Scott Bush, a former investment advisor who traded spreadsheets for stills after developing a passion for craft spirits, the distillery opened in 2018 after several years of planning and navigating Iowa’s distilling regulations. Bush partnered with experienced distiller Jamie Stoos to create a operation focused on bourbon, rye whiskey, and gin using locally-sourced Iowa corn and other regional ingredients. Bush’s journey from finance to distilling started with home brewing and evolved into a serious study of American whiskey production. He spent time learning from established distilleries before deciding Iowa was ready for a premium craft distillery. The team uses a 250-gallon copper pot still and focuses on small-batch production, typically releasing spirits in limited quantities. Their philosophy centers on letting Iowa’s agricultural bounty shine through their spirits, working directly with local farmers for corn and other grains when possible. The experience here feels more like visiting a working laboratory than a tourist attraction. You’ll walk through their compact but efficient production space, see the mash tuns and fermentation tanks up close, and learn about their grain-to-glass process. The tasting room maintains an industrial-meets-rustic vibe with exposed brick and modern fixtures. Bush and his team are usually on-site and genuinely excited to talk about their craft, from the science of fermentation to the art of barrel selection.

WHAT SETS THEM APART

Iowa Corn From Farm to Glass

The Foundry stands out as one of the few true grain-to-glass operations in central Iowa, with Bush personally sourcing corn and other grains from farms within a 50-mile radius of the distillery. Their commitment to local ingredients extends to working with Iowa State University’s agriculture program to experiment with heritage corn varieties that add unique flavor profiles to their mash bills. The distillery’s location in Valley Junction puts them in the middle of a historic district that’s been carefully restored, making them part of a broader story about revitalizing Iowa’s small-town commercial areas through craft businesses.

THE VISITOR EXPERIENCE

Working Distillery Not Tourist Attraction

Tours here are intimate affairs, usually led by Bush himself or master distiller Stoos, with groups capped at around eight people so everyone can ask questions and see the equipment up close. You’ll smell the sweet corn mash fermenting, watch the copper still in action if you visit during production hours, and learn about their barrel aging program. The tasting focuses on their current releases, with detailed explanations of how different mash bills create different flavor profiles. The space feels authentic rather than polished—this is a working distillery first, tourist destination second.

IS IT WORTH VISITING

Serious Learning Serious Whiskey

If you’re serious about understanding craft distilling or Iowa’s emerging spirits scene, The Foundry delivers an educational experience you won’t get at larger operations. Bush’s background in finance gives him a unique perspective on the business side of distilling, while Stoos brings serious technical knowledge about production. Don’t expect elaborate gift shops or fancy cocktail bars—you’re here to learn about making whiskey and taste the results. It’s perfect for bourbon enthusiasts who want to see small-batch production in action and understand how local ingredients influence flavor.

⚠️ VISITING TIPS

Call ahead to schedule tours since they don’t run on a fixed schedule—Bush prefers to work around production needs and give personal attention to visitors. Saturday afternoons tend to work best for tours when they’re not actively distilling. Ask specifically about their heritage corn experiments and barrel aging philosophy—Bush loves talking about both topics. Parking is available on the street in Valley Junction, and you can easily walk to other shops and restaurants in the historic district before or after your visit.

FREQUENTLY ASKED QUESTIONS

The Foundry in Valley Junction — Visitor FAQ

Do I need to schedule tours in advance?
Yes, The Foundry operates by appointment only since it’s primarily a working distillery. Call ahead to arrange tours, especially on weekends when Scott Bush can give personal attention to visitors without interrupting production schedules.
What makes their spirits different from other Iowa distilleries?
They source corn and grains exclusively from farms within 50 miles of the distillery and work with Iowa State University to experiment with heritage corn varieties. Their small 15-gallon barrels create faster maturation, and they bottle most spirits at barrel proof to showcase the Iowa grain character.
Can I buy bottles to take home?
Yes, they sell bottles of their bourbon, rye whiskey, and gin on-site when available. Production runs are small, so inventory varies—calling ahead can help ensure your preferred spirits are in stock before visiting.
