BLACK BAND Distillery sits in downtown Peoria at 1000 SW Adams Street, occupying a historic building that’s been transformed into one of Illinois’ craft distilling destinations. Founded by Steve Hootman in 2014, the distillery takes its name from the rich, dark topsoil that made central Illinois farmland so valuable—a nod to the agricultural heritage that provides the grains for their spirits. Hootman, who spent years in the banking industry before pursuing his passion for craft distilling, opened the doors after navigating the complex process of bringing legal distilling back to Peoria County. The operation produces bourbon, rye whiskey, and vodka in small batches using locally sourced grains when possible. The distillery combines traditional copper pot stills with modern production techniques, creating spirits that reflect both craftsmanship and innovation.
