ABOUT THIS DISTILLERY

Whiskey Acres Distilling Company sits on 1,400 acres of working farmland in DeKalb, Illinois, about an hour west of Chicago. Founded in 2013 by Nick Nagele, Jamie Walter, and Jim Walter, this farm-to-bottle operation grows its own corn, wheat, and rye right on the property where they distill. The distillery opened its doors in 2016 in a converted barn that serves as both production facility and tasting room, creating one of the most authentic grain-to-glass experiences you’ll find anywhere. Nick Nagele, who handles the distilling duties, came from a finance background but had been homebrewing and distilling as a hobby for years before diving in full-time. The Walter brothers bring farming expertise—their family has been working this land for decades. What started as conversations about what to do with excess grain turned into a full-scale distillery operation. They’re literally distilling spirits from grain that was growing in the field outside their windows just months earlier, which gives you a connection to the product that’s pretty rare in the spirits world. The operation produces bourbon, rye whiskey, vodka, and gin, all using estate-grown grains. The facility includes the working distillery with copper pot stills, a barrel rickhouse, and a tasting room where you can sample their spirits while looking out at the fields that produced them. It’s not fancy or polished—it’s a real working farm that happens to make excellent whiskey. You’ll often find one of the founders pouring tastings or giving tours, and they’re genuinely excited to talk about both the farming and distilling sides of what they do.

WHAT SETS THEM APART

Whiskey Acres is one of the few truly farm-to-bottle distilleries in the Midwest, meaning they control every step from planting the grain to bottling the whiskey. They grow heirloom corn varieties and winter wheat on their 1,400-acre farm, then harvest, mill, mash, ferment, distill, age, and bottle everything on-site. The estate-grown approach lets them experiment with different grain varieties and harvest times to see how they affect flavor—something most distilleries can’t do since they buy grain from suppliers. Their location on active farmland also means the rickhouse experiences the full range of Illinois weather extremes, which accelerates aging and creates unique flavor profiles in their barrels.

THE VISITOR EXPERIENCE

Tours take you through the entire property, starting in the grain fields where you can see what will eventually become whiskey, then into the production facility to see their copper pot stills and fermentation tanks. The founders or their team lead most tours, so you’re getting information straight from the people who grew the grain and made the spirits. The tasting room feels like a converted barn because it is one—concrete floors, exposed beams, and windows overlooking the fields. Tastings include their core lineup of bourbon, rye, vodka, and gin, with detailed explanations of how the estate-grown grains influence each spirit’s character. The whole experience takes about an hour and gives you a genuine behind-the-scenes look at farm-to-bottle production.

IS IT WORTH VISITING

If you’re interested in the agricultural side of spirits production or want to understand how grain varieties affect flavor, this is absolutely worth the drive. It’s perfect for whiskey enthusiasts who appreciate the craft and want to see the full process, plus anyone curious about sustainable, local production. The spirits themselves are well-made and the farm setting provides context you won’t get at urban distilleries. However, if you’re looking for a polished tourist experience with fancy amenities, this might feel too rustic. It’s a working farm first, tourist attraction second, which is exactly what makes it special for the right visitor.

⚠️ VISITING TIPS

Call ahead to book tours since they’re a small operation and don’t always have staff available for walk-ins. Spring through fall offers the best experience when you can see crops in various stages of growth. Ask about their different grain varieties and how harvest timing affects flavor—the founders love talking about these details. The location is rural so GPS is essential, and look for the Whiskey Acres signs since the farm entrance isn’t immediately obvious from the road. Parking is gravel and can get muddy after rain, so dress accordingly. If you’re coming from Chicago, pair it with other stops in the area since it’s about an hour drive.
