Founded by Ziad Abi-Nasr, a Lebanese-American entrepreneur who previously worked in hospitality and real estate, the distillery opened in 2019 with a vision to create premium rum using traditional methods combined with modern innovation. The 4,000-square-foot facility houses copper pot stills and fermentation tanks, focusing on small-batch rum production that reflects both Caribbean heritage and Florida’s tropical climate.
Abi-Nasr’s journey into distilling began during frequent trips to the Caribbean, where he developed an appreciation for artisanal rum-making traditions. He spent two years researching distillation techniques and sourcing equipment before launching ZIAMI, which combines his initials with Miami’s identity. The distillery works with local sugarcane suppliers and uses a combination of column and pot still distillation to create their signature rums. Master distiller Carlos Rodriguez brings fifteen years of Caribbean rum-making experience to the operation.
The Hollywood location offers visitors an intimate look at rum production in a modern facility designed for both efficiency and hospitality. You’ll find exposed brick walls, polished concrete floors, and large windows that flood the production area with natural light. The tasting room features reclaimed wood tables and industrial fixtures, creating a relaxed atmosphere where you can sample their growing portfolio of aged and flavored rums. Tours run on weekends and include hands-on explanations of their fermentation and distillation processes.
