ABOUT THIS DISTILLERY

French Winemaking Meets Wisconsin Distilling

Wollersheim Winery & Distillery sits on a hillside overlooking the Wisconsin River in Prairie du Sac, about 25 miles northwest of Madison. Philippe Coquard and his wife Julie brought their French winemaking heritage to Wisconsin in 1972, purchasing the historic Kehl Brewery building and surrounding vineyard land that dates back to the 1840s. The property itself has deep roots in alcohol production—Hungarian Count Agoston Haraszthy first planted grapes here in 1847 before heading to California to become known as the father of California viticulture. What started as purely a winery operation expanded into distilling in the 2000s, when the Coquards saw an opportunity to apply their fermentation expertise to craft spirits. The limestone building that houses their operations was constructed in the 1850s and maintains much of its original character, with thick stone walls that provide natural temperature control for aging spirits. They produce a range of spirits including brandy, gin, rum, and fruit brandies, often incorporating their own estate-grown ingredients when possible. The distillery operates alongside their established winery, creating a unique hybrid operation where visitors can experience both wine and spirit production in one location. Philippe’s background as a Frenchman trained in traditional distillation methods brings an old-world approach to their spirit production, while Julie handles much of the business operations and hospitality aspects. The 45-acre estate includes not just production facilities but also event spaces and tasting rooms that overlook the scenic Wisconsin River valley.

WHAT SETS THEM APART

Historic Limestone Cellars Built in 1850

Wollersheim stands out as one of the few operations successfully running both a winery and distillery under one roof, with the Coquard family applying traditional French distillation techniques learned from Philippe’s European background to Wisconsin-grown ingredients. Their location on the historic Haraszthy vineyard site connects them to Wisconsin’s earliest alcohol production heritage, and they’ve maintained the original 1850s limestone buildings that provide ideal aging conditions. The distillery benefits from their decades of winemaking experience, particularly in fermentation science, which translates into more complex flavor development in their spirits. They often incorporate estate-grown fruits and grains when possible, creating a true farm-to-bottle operation that’s rare in the Midwest. The combination of French traditional methods with Wisconsin agricultural products creates spirits that you won’t find elsewhere, and their ability to offer both wine and spirit experiences in the same visit makes them unique in the region.

THE VISITOR EXPERIENCE

Intimate Tours with The Actual Owners

You’ll spend most of your time in the historic limestone building where the thick stone walls keep things naturally cool and create an authentic old-world atmosphere. Tours typically include both the winery and distillery operations, letting you see fermentation tanks, copper stills, and aging areas while learning about the property’s 175-year history of alcohol production. The tasting room overlooks the Wisconsin River valley, and staff members are usually well-versed in both wine and spirit production since they work with both sides of the operation. Philippe or Julie Coquard often personally lead tours when they’re available, sharing stories about bringing French techniques to Wisconsin and the challenges of running a dual operation. The experience feels more intimate than large commercial distilleries, with tastings conducted at a relaxed pace that encourages questions about their unique processes. You can taste through their spirit lineup while learning about how their winemaking background influences their distillation approach, and the hillside setting provides scenic views that make the visit feel more like exploring a European estate than a typical American distillery.

IS IT WORTH VISITING

Two Crafts Under One Historic Roof

This is perfect for people who appreciate artisanal production methods and want to experience something different from typical grain-focused distilleries. Wine lovers will particularly enjoy seeing how fermentation expertise translates between wine and spirits, and the historic setting provides more character than most newer distillery facilities. The French influence and estate-grown ingredient approach appeals to visitors interested in terroir and traditional methods rather than high-volume production. It’s not the place for people seeking elaborate visitor facilities or party atmospheres—this is more about intimate, educational experiences with the actual producers. The combination wine and spirit experience makes it efficient for groups with different preferences, and the scenic location adds value beyond just the alcohol. Anyone interested in Wisconsin’s agricultural heritage or curious about how European techniques adapt to Midwest ingredients will find plenty to appreciate here.
