ABOUT THIS DISTILLERY

Former Auto Shop Turned Craft Distillery

Witness Distillery sits on West Gallatin Street in Vandalia, Illinois, a town that once served as the state capital. Founded by Dustin and Brandi Horman in 2017, this craft distillery emerged from Dustin’s passion for distilling that began as a hobby during his college years. The couple converted a former auto repair shop into their 2,500-square-foot facility, complete with a custom 250-gallon copper still from Vendome Copper & Brass Works. They focus on small-batch bourbon, rye whiskey, and vodka, with plans to expand their whiskey offerings as their spirits age. The Hormans didn’t take the traditional path to distilling. Dustin worked in manufacturing while developing his distilling skills, and Brandi handled the business side while maintaining her day job initially. They spent two years navigating licensing requirements and converting their building before opening to the public. Their master distiller approach emphasizes local ingredients when possible and traditional copper pot distillation methods. The facility includes their production area, a tasting room with exposed brick walls and industrial touches that nod to the building’s automotive past. Visitors get an authentic small-town distillery experience where you’ll likely meet the founders themselves. The atmosphere is unpretentious and educational, with tours that take you through their entire process from grain to glass. You can taste their current offerings while learning about their aging whiskey program and future releases. It’s the kind of place where conversations flow as easily as the spirits, and you’ll leave understanding not just what they make, but why they chose this path.

WHAT SETS THEM APART

First Legal Distillery Since Prohibition Era

Witness Distillery stands as Vandalia’s first legal distillery since Prohibition, bringing craft spirits back to Illinois’s former capital city. The Hormans built their operation from scratch in a converted auto shop, installing custom copper equipment and designing their recipes through years of experimentation before going commercial. Their small-batch approach means they’re producing around 1,000 bottles per month, allowing them to maintain hands-on quality control throughout every step. They’re also aging bourbon and rye in full-size barrels despite their small scale, committing to traditional maturation methods rather than accelerated aging techniques that many craft distilleries use.

THE VISITOR EXPERIENCE

Meet the Makers Behind Every Bottle

You’ll step into a working distillery where the copper still dominates the production floor and the smell of fermenting grain fills the air. Dustin or Brandi typically lead tours themselves, walking you through their mash tun, fermentation tanks, and distillation process while explaining their grain bills and cuts. The tasting room maintains the building’s industrial character with polished concrete floors and exposed elements, creating a comfortable space that feels authentic rather than designed. Tours last about 45 minutes and include tastings of their current spirits, with plenty of time for questions about their process and aging program.

IS IT WORTH VISITING

Real Craft Spirit No Corporate Gloss

This is perfect for spirits enthusiasts who appreciate meeting the actual makers and understanding small-scale production. You’re getting an intimate experience with founders who can explain every decision they’ve made, from equipment choices to recipe development. It won’t satisfy visitors looking for polished tourist attractions or extensive food offerings, but if you want to taste spirits made by passionate craftspeople and learn about the realities of starting a distillery, you’ll find it rewarding. The small-town setting adds charm, and supporting a local business that’s bringing distilling back to historic Vandalia feels meaningful.

⚠️ VISITING TIPS

Call ahead or check their Facebook page before visiting, as hours can vary seasonally and they sometimes close for private events or production needs. The building sits on West Gallatin Street with street parking available, though GPS might take you slightly off course in downtown Vandalia, so look for the Witness Distillery signage. Ask about their aging whiskey program during your visit – they’re happy to discuss their barrel selection and maturation plans. If you’re interested in purchasing bottles, they typically have their vodka and any released whiskey available, but quantities are limited due to their small-batch production.

FREQUENTLY ASKED QUESTIONS

Witness Distillery — Visitor FAQ

Do I need to make a reservation for tours and tastings?
Yes, it’s best to call ahead or message them on social media to schedule your visit. As a small operation, they want to ensure someone is available to give you proper attention and that they’re not in the middle of production when you arrive.
What spirits can I buy on-site?
They typically have their vodka available for purchase, and occasionally limited releases of their whiskey depending on what they’ve bottled recently. Since they’re a small-batch operation, inventory varies, so it’s worth asking what’s available when you visit.
How long has Witness Distillery been operating?
They opened in 2017 after spending two years getting licensed and converting their building. They’re still aging much of their whiskey, so their bourbon and rye offerings will expand as those barrels reach maturity.
