ABOUT THIS DISTILLERY

Industrial Garage Turned Bourbon Laboratory

White Dog Distilling Co & Bourbon Bar sits on Central Avenue in Middletown, Ohio, bringing craft spirits and bourbon culture to this historic Butler County town. Founded by local entrepreneur Mike Stanton in 2018, the distillery operates out of a restored 1920s automotive garage that’s been transformed into a production facility and tasting room. You’ll find small-batch bourbon, rye, and moonshine coming off their custom 250-gallon copper still, along with a full bourbon bar featuring both their own spirits and carefully selected bottles from other craft producers. Stanton’s journey into distilling started after a career in manufacturing, where he developed an appreciation for precision processes and quality control. He spent three years learning the craft before opening White Dog, working with local grain suppliers and aging his bourbon in full-size barrels despite the smaller production scale. The name pays homage to the clear, unaged spirit that comes straight off the still – what distillers call “white dog” before it goes into barrels to become whiskey. The experience here centers around education and experimentation. You can taste bourbon at different stages of aging, compare their white dog to the finished product, and learn how Ohio’s climate affects the aging process. The space maintains its industrial character with exposed brick and steel beams, while the bourbon bar side offers creative cocktails made with their spirits. It’s designed for bourbon curious folks who want to understand the process, not just drink the end result.

WHAT SETS THEM APART

Taste the Same Bourbon At Every Age

What sets White Dog apart is their transparent approach to the aging process – they’ll show you the same bourbon at 6 months, 1 year, and 2 years so you can taste how time and Ohio’s temperature swings develop flavor. Most craft distilleries focus on their finished products, but Stanton believes understanding the journey makes you appreciate the destination. They’re also one of the few distilleries in Southwest Ohio that grows some of their own corn through partnerships with Butler County farmers, creating a true grain-to-glass operation that supports the local agricultural community.

THE VISITOR EXPERIENCE

Education Over Entertainment The Real Process

Tours start in the production area where you’ll meet head distiller Sarah Coleman, who walks you through their mashing, fermentation, and distillation process with hands-on demonstrations. The space smells like sweet corn mash and oak, and you can feel the heat from the still on busy production days. Tastings happen at the bourbon bar where they’ll pour flights comparing their white dog, young whiskey, and aged bourbon side by side. Coleman knows every barrel personally and can tell you stories about how weather patterns affected specific batches.

IS IT WORTH VISITING

For Bourbon Geeks Not Casual Crowds

This is perfect for bourbon enthusiasts who want to geek out on the technical side of whiskey making rather than casual drinkers looking for a party atmosphere. You’ll leave understanding why bourbon tastes the way it does and appreciating the complexity behind what seems like a simple process. If you’re just looking to get buzzed or want a polished tourist experience, you might find it too educational and production-focused. But if you’ve ever wondered what makes one bourbon different from another, this is exactly where you need to go.

⚠️ VISITING TIPS

Call ahead or check their Facebook page before visiting – they’re still a small operation and sometimes close for production or private events. Weekend afternoons are best for tours when both Stanton and Coleman are usually on-site. Ask to taste the white dog first, then work your way up to aged spirits so you can really understand the progression. Parking is easy in their gravel lot behind the building, and don’t trust GPS completely – look for the big white dog painted on the brick wall.

FREQUENTLY ASKED QUESTIONS

White Dog Distilling Co & Bourbon Bar — Visitor FAQ

Do I need to book tours in advance?
Yes, definitely call ahead or message them on Facebook. They’re a small operation and tours are limited to 8 people to keep the educational focus. Weekend afternoons are most reliable for tour availability.
What’s the difference between white dog and bourbon?
White dog is the clear spirit that comes straight off the still before barrel aging. It becomes bourbon after aging in charred oak barrels, which adds color, vanilla, and caramel flavors. Their tastings show you this progression side by side.
Can I buy bottles to take home?
Yes, they sell bottles of their bourbon, rye, and moonshine on-site. Since production is limited, availability varies but they usually have at least two of their core spirits in stock. Call ahead if you’re looking for something specific.
