Tierra Distilling Co. & Cafe sits on Burlington Avenue in Clarendon Hills, bringing craft spirits and Latin-inspired cocktails to the western suburbs of Chicago. Founded by husband-and-wife team Miguel and Patricia Perez in 2018, this isn’t your typical American whiskey operation—they’re making agave spirits, rum, and vodka with techniques Miguel learned growing up in Jalisco, Mexico. The 3,000-square-foot space combines a working distillery with a full cafe and cocktail bar, housed in a converted commercial building that they gutted and rebuilt themselves over two years. Miguel handles production on a 500-liter copper still he imported from Mexico, while Patricia runs the front of house and develops the food menu that bridges Mexican flavors with Midwestern ingredients. The name “Tierra” means earth in Spanish, reflecting their commitment to using local grains and traditional fermentation methods that Miguel’s grandfather taught him. They opened just as craft distilling was taking off in Illinois, becoming one of the few Latino-owned distilleries in the state and the first in DuPage County to focus primarily on agave-based spirits.
