ABOUT THIS DISTILLERY

High Desert Spirits From Heritage Corn

Rolling Still Distillery opened in 2019 in Taos, New Mexico, founded by Shasta Hemstreet, who left her career in tech to pursue craft distilling in the high desert of northern New Mexico. The distillery operates out of a 3,000-square-foot facility at 110 Paseo Del Pueblo Norte, where they produce whiskey, vodka, and gin using locally-sourced ingredients including New Mexico corn and Rocky Mountain water. The Lounge by Rolling Still serves as their tasting room and cocktail bar, offering craft cocktails made with their house-made spirits. Hemstreet’s journey to distilling started as a home hobby that grew into a passion for creating spirits that reflect New Mexico’s unique terroir. She partnered with local farmers to source heritage corn varieties and worked to develop recipes that incorporate regional botanicals like piñon and juniper. The operation focuses on small-batch production, with Hemstreet overseeing every aspect from mashing to bottling. The distillery uses a 500-gallon copper still and ages their whiskey in new American oak barrels in the dry mountain climate, which accelerates maturation. Visitors to The Lounge experience a modern tasting room with views of the production floor, where you can watch the distilling process while sampling cocktails made with Rolling Still’s spirits. The space combines industrial elements with southwestern touches, creating an atmosphere that’s both sophisticated and approachable. Hemstreet often works the bar herself, sharing stories about the distilling process and the challenges of building a craft distillery in a small mountain town.

WHAT SETS THEM APART

Foraged Juniper and Piñon In Every Bottle

Rolling Still stands out as one of the few craft distilleries operating at high altitude in New Mexico, taking advantage of the dry climate and temperature swings that accelerate whiskey aging. Hemstreet sources heritage corn varieties from local New Mexico farms, including blue corn that adds distinctive color and flavor to some batches. The distillery incorporates regional botanicals like wild juniper and piñon into their gin, creating spirits that taste distinctly of place. The combination of tech industry precision with traditional distilling methods creates a unique approach to recipe development and quality control.

THE VISITOR EXPERIENCE

Watch the Still While Sipping Cocktails

The Lounge offers a casual but sophisticated atmosphere where you can sample Rolling Still’s spirits in well-crafted cocktails while watching the distilling operation through large windows. Hemstreet and her small team provide an intimate experience, often explaining their processes and the story behind each spirit. The tasting room features a modern bar with local artwork and mountain views, where you can try flights of their whiskey, vodka, and gin alongside cocktails that showcase each spirit’s character. The space feels more like a neighborhood cocktail bar than a typical distillery tasting room.

IS IT WORTH VISITING

Intimate Craft Experience Worth the Mountain Drive

This is perfect for visitors who want to experience New Mexico’s emerging craft spirits scene without the crowds of larger operations. You’ll get personal attention from the founder and learn about the unique challenges of distilling in the high desert. The cocktails are expertly made and the spirits show real character that reflects their mountain location. However, if you’re looking for extensive tours or large group experiences, this intimate operation might feel too small. It’s best for serious spirits enthusiasts and those who appreciate the craft cocktail scene.

⚠️ VISITING TIPS

The Lounge operates with limited hours, so check their website or call ahead before visiting. Parking is available on Paseo Del Pueblo Norte, but spaces can fill up during Taos’s busy tourist seasons. Ask Hemstreet about their seasonal batches and which spirits are currently aging in barrels. Try the gin-based cocktails to experience their use of local botanicals. The best times to visit are late afternoon or early evening when you’re most likely to catch production in action and have time to chat with the team about their processes.
