A Working Farm That Happens to Distill

Springbrook Hollow Farm Distillery sits on a working farm in Fort Ann, New York, about 20 minutes north of Saratoga Springs in the Adirondack foothills. Founded by husband-and-wife team Tim and Estelle Dressel, who left corporate careers to pursue their passion for craft spirits, the distillery opened in 2012 as one of New York’s earliest farm distilleries. The operation centers around a restored 1800s barn on their 200-acre property, where they grow their own grains and distill everything from vodka to bourbon using a 500-gallon copper pot still. Tim handles the distilling while Estelle manages the tasting room and tours, creating an intimate family operation that feels more like visiting friends than a commercial distillery. The Dressels committed to using as many local ingredients as possible, sourcing grains from their own fields and neighboring farms within a 50-mile radius. What started as weekend hobby quickly grew into a full-time venture when friends kept asking for bottles of Tim’s experimental batches. The couple spent two years navigating state regulations and converting their barn into a licensed facility, officially opening their doors in late 2012.

Grain to Glass From The Same Field

This is one of the few distilleries where you can literally see the grain growing in the fields around the tasting room. The Dressels grow their own corn, wheat, and rye on the property, giving them complete control over their supply chain from seed to bottle. Their location in the Adirondack region provides exceptionally pure water from a natural spring on the property, which Tim credits as the secret to their smooth vodka. The distillery operates more like an agricultural operation than a typical spirits producer, with harvest season directly impacting production schedules. They’re also one of the smaller operations you’ll find, producing only about 1,000 cases annually, which means limited releases actually sell out rather than being marketing gimmicks.

Not a Production Tour A Farm Walk
