The name comes from the seven sea caves at La Jolla Cove, just minutes from their distillery, connecting their spirits to San Diego’s coastal identity. What started as a passion project between two friends has evolved into a sophisticated operation producing vodka, gin, and whiskey in small batches.
Zafiropoulos and Graham didn’t take the typical path to distilling. Both came from corporate backgrounds but shared a fascination with the craft spirits movement sweeping California. They spent years researching distillation techniques and sourcing equipment before committing to their Sorrento Mesa location. The facility houses custom copper stills and fermentation tanks, allowing them to control every aspect of production from grain to bottle.
The tasting room reflects their modern approach—clean lines, industrial touches, and large windows that flood the space with California sunshine. You’re not getting the rustic barn aesthetic here, but rather a contemporary take on craft distilling that feels distinctly San Diego.
