ABOUT THIS DISTILLERY

Seed & Spirit Distilling sits in Fort Collins’ Lincoln Corridor, occupying a converted warehouse space that buzzes with the kind of energy you’d expect from a craft distilling operation run by people who genuinely love what they do. Founded by husband-and-wife team Tim and Sarah Larsen in 2019, this operation grew out of Tim’s background in biochemistry and Sarah’s business acumen—plus a shared obsession with creating spirits that actually taste like something. They spent two years perfecting recipes in their garage before taking the leap into commercial production, and you can still catch them working the stills most days. The distillery produces vodka, gin, and whiskey, with plans to expand their barrel program as their initial whiskey stocks mature. The Larsens didn’t stumble into distilling by accident. Tim worked for New Belgium Brewery for nearly a decade as a quality control manager before deciding he wanted to create something from scratch rather than just maintain consistency in existing products. Sarah handled marketing for several Fort Collins startups and knew the local landscape well enough to spot an opportunity. They bootstrapped the entire operation, which means every piece of equipment was chosen deliberately rather than just grabbing whatever fit the budget. Their 250-gallon still came from a family operation in Kentucky, and they’ve modified it with additional copper plating to get the clean finish they wanted in their vodka. When you visit, you’re walking into an active production facility rather than a polished tasting room with distilling as window dressing. The space smells like grain and juniper, and you’ll likely hear the still running in the background. Sarah usually handles tastings while Tim manages production, and both are happy to explain their process without the usual craft spirits marketing speak. They’re making around 200 cases per month right now, with plans to double that capacity by adding a second still in 2024.

WHAT SETS THEM APART

What sets Seed & Spirit apart is their approach to botanical sourcing and their willingness to experiment with locally-grown ingredients. Rather than ordering gin botanicals from suppliers, they work directly with Colorado farmers to source juniper from the Western Slope and collaborate with Front Range herb growers for unique additions like wild bergamot and prairie sage. Tim’s biochemistry background shows up in their precise approach to cuts during distillation—they’re making narrower heads and tails cuts than most craft distilleries, which takes longer but results in cleaner spirits. They’re also one of the few Colorado distilleries aging whiskey in barrels coopered specifically for Colorado’s dry climate, with a slightly thicker char to compensate for faster evaporation rates at altitude.

THE VISITOR EXPERIENCE

Tastings happen right in the production space at a small bar Tim built from reclaimed wood, so you’re surrounded by fermentation tanks and the copper still while you sample their spirits. Sarah leads most tastings and knows the story behind every botanical choice and production decision—she’ll explain why they use a specific type of wheat in their vodka or how altitude affects their whiskey aging. The atmosphere is casual and educational rather than formal, and you’ll often get to taste experimental batches or barrel samples that aren’t available for purchase yet. The space isn’t large or fancy, but the intimacy works in their favor since you get direct access to the people actually making the spirits.

IS IT WORTH VISITING

This is perfect for spirits enthusiasts who want to understand the actual craft behind craft distilling rather than just sample products. If you’re looking for a polished tasting room experience with charcuterie boards and Instagram-worthy interiors, this isn’t your spot. But if you want to learn about botanical selection, talk fermentation science with someone who actually understands it, and taste spirits that reflect genuine experimentation rather than safe market choices, Seed & Spirit delivers. Their gin is genuinely distinctive thanks to the local botanicals, and their approach to vodka production results in something with actual character rather than just neutral grain spirit. It’s also worth visiting if you’re interested in supporting a truly independent operation—these aren’t former corporate executives playing with daddy’s money.

⚠️ VISITING TIPS

Call ahead since they don’t always have someone available for tastings during production days, especially when they’re running the still. Sarah prefers to schedule tastings when she can give you full attention rather than rushing through while managing other tasks. Ask specifically about their seasonal botanical experiments—they often have small batches featuring foraged ingredients that won’t make it into regular production. The location can be tricky to find since it’s in a mixed-use development, so look for the small Seed & Spirit sign rather than expecting a large storefront. Parking is shared with other businesses but usually available. If you’re genuinely interested in their process, they’re happy to spend extra time explaining techniques, but don’t expect a formal tour structure.

FREQUENTLY ASKED QUESTIONS

Seed & Spirit Distilling — Visitor FAQ

Do I need to make an appointment for tastings?
Yes, they strongly prefer appointments since this is an active production facility and they want to ensure someone’s available to give you proper attention. Call ahead rather than just showing up, especially on weekdays when they might be running production.
What makes their gin different from other Colorado distilleries?
They source botanicals directly from Colorado farmers rather than using standard supplier ingredients, and they work with foraged elements like prairie sage and wild bergamot. Tim’s biochemistry background also shows up in more precise distillation cuts that result in cleaner flavors.
When will their whiskey be available?
They’re releasing limited quantities of their first whiskey batches now, aged two years in smaller barrels. Larger releases will come as their stock matures, with plans for single-barrel bottlings as the program develops.
