ABOUT THIS DISTILLERY

Downtown Warehouse Turned Craft Distillery

Safe House Distilling Co. sits in downtown Albuquerque’s warehouse district at 616 Gold Ave SW, inside a converted industrial space that perfectly captures the gritty-meets-craft vibe of modern distilling. Founded by Cory Valdez and Tom Macdonald in 2017, this operation grew from their shared background in hospitality and a desire to create something uniquely New Mexican. Valdez, who spent years managing restaurants, and Macdonald, with experience in food and beverage operations, decided Albuquerque needed a distillery that reflected the city’s blend of cultures and flavors. Their facility produces vodka, gin, and whiskey using local ingredients whenever possible, including blue corn sourced from New Mexico farmers. The name ‘Safe House’ reflects their vision of creating a gathering place where people can escape the chaos outside and enjoy carefully crafted spirits in a welcoming environment. The distillery occupies several thousand square feet of warehouse space, with exposed brick walls, concrete floors, and industrial lighting that gives the whole place an authentic, unpretentious feel. You’ll find their copper still prominently displayed, along with fermentation tanks and aging barrels that show this is a working distillery first, tourist destination second.

WHAT SETS THEM APART

Blue Corn Whiskey New Mexico Style

What sets Safe House apart is their commitment to incorporating New Mexico’s agricultural heritage into their spirits, particularly their use of blue corn in whiskey production. Blue corn isn’t just a marketing gimmick here – it’s a deliberate choice that connects their whiskey to the region’s indigenous farming traditions while creating a distinctly different flavor profile than typical yellow corn mashes. The distillery operates on a relatively small scale, allowing them to experiment with different recipes and techniques without the pressure of massive production quotas. Their location in Albuquerque’s warehouse district puts them in the heart of the city’s growing arts and food scene, making them part of a larger cultural renaissance rather than an isolated tourist attraction.

THE VISITOR EXPERIENCE

Working Distillery First Tourist Spot Second

Walking into Safe House feels more like visiting a working brewery than a polished tourist destination, which is exactly the point. The tasting room occupies part of the production space, so you’re literally surrounded by tanks, barrels, and the equipment that makes the spirits you’re sampling. Tours are informal affairs led by staff who actually work in production, not professional tour guides reading scripts. You’ll taste their current lineup while learning about their process, from grain selection through distillation and aging. The atmosphere is relaxed and conversational – think industrial chic with worn leather furniture and metal accents rather than fancy chandeliers and marble bars.

IS IT WORTH VISITING

Real Craft Spirits No Theme Park

If you’re looking for a polished, tourist-focused experience with elaborate tours and gift shops, Safe House might not be your speed. But if you want to see how craft distilling actually works and taste spirits made by people who are genuinely passionate about their craft, this place delivers. It’s particularly worth visiting for whiskey enthusiasts curious about how blue corn affects flavor, or anyone interested in New Mexico’s growing craft spirits scene. The casual, unpretentious vibe makes it accessible for beginners while offering enough depth for serious spirit nerds. Just don’t expect theme park-level production values – this is about the spirits, not the spectacle.

⚠️ VISITING TIPS

Call ahead or check their social media before visiting, as hours can vary based on production schedules and private events. The distillery is in a warehouse district, so GPS should get you close, but look for the Safe House sign rather than relying solely on street numbers. Parking is typically available on the street or in nearby lots. During tastings, ask about their blue corn whiskey process – the staff genuinely enjoys explaining how it differs from traditional corn whiskey. If you’re interested in purchasing bottles, they usually have their current releases available on-site. The space can get busy during evening hours and weekends, so earlier visits tend to be more relaxed and allow for longer conversations with staff.

FREQUENTLY ASKED QUESTIONS

Safe House Distilling Co. — Visitor FAQ

What makes your blue corn whiskey different from regular whiskey?
Blue corn has a different starch and protein content than yellow corn, which creates a nuttier, more complex flavor profile. It’s also connected to New Mexico’s agricultural heritage, making our whiskey distinctly regional rather than just another bourbon.
Do I need to book tours in advance?
Not usually, but it’s smart to call ahead since we’re a working distillery and sometimes have private events or production activities that limit visitor access. Weekend visits are more likely to need advance notice.
Can I buy bottles to take home?
Yes, we typically have our current releases available for purchase on-site. Selection can vary based on production schedules and what’s currently ready for sale.
