Pensive Distilling Company sits in the historic Monmouth neighborhood of Newport, Kentucky, just across the river from Cincinnati. Founded in 2016 by husband-and-wife team Keith and Angie Norris, this craft distillery occupies a renovated 19th-century building that formerly housed various manufacturing operations. Keith, who spent years in corporate finance, and Angie, a former restaurant manager, decided to pivot careers after falling in love with the science and artistry of distillation during a bourbon trail trip. They produce bourbon, rye whiskey, and gin using traditional methods on their custom copper still.
