ABOUT THIS DISTILLERY

Ocean Vodka Organic Farm and Distillery sits on 80 acres of certified organic farmland in upcountry Maui, at 4,000 feet elevation on the slopes of Haleakala volcano. Founded in 2005 by Shay Smith, this operation started as Hawaii’s first certified organic vodka distillery and remains one of the most unique spirits operations in the state. Smith, who previously worked in technology, wanted to create something that truly captured the essence of Hawaii using local ingredients and traditional farming methods. The distillery produces Ocean Vodka using organic sugar cane grown right on the property, combined with deep ocean mineral water sourced from 3,000 feet below the Pacific’s surface off the Big Island. What began as a small agricultural experiment has grown into a full-scale organic farm and distillery that processes everything from field to bottle on-site. The property includes the production facility, tasting room, and expansive organic gardens where visitors can see sugar cane, tropical fruits, and vegetables growing in Maui’s rich volcanic soil. Beyond vodka, they’ve expanded to produce rum and other spirits, all maintaining their commitment to organic certification and local sourcing. The farm-to-bottle approach means everything from the base ingredients to the final product happens within view of the Pacific Ocean, making this as much an agricultural experience as a distillery visit.

WHAT SETS THEM APART

This is the only certified organic distillery in Hawaii and one of the few operations anywhere that grows its own sugar cane for spirits production. The deep ocean mineral water they use comes from a specific source 3,000 feet below sea level off Hawaii’s Big Island, giving their vodka a distinctive mineral profile you can’t replicate elsewhere. The 4,000-foot elevation provides a unique micro-climate where sugar cane thrives in volcanic soil, and the entire 80-acre property maintains USDA organic certification. Smith’s background in technology led him to develop precise fermentation and distillation processes that maximize the sugar cane’s natural characteristics while incorporating the ocean water’s mineral content. The farm tour reveals sugar cane fields, organic gardens, and the distillation process all in one location, which is extremely rare in American craft distilling.

THE VISITOR EXPERIENCE

You’ll start with a walk through the organic sugar cane fields and gardens, where guides explain how volcanic soil and elevation create ideal growing conditions. The tour moves through the production facility where you can see the fermentation tanks and custom-built stills that process the estate-grown cane into spirits. The tasting room overlooks the farm with views toward the Pacific, and tastings include their signature Ocean Vodka alongside seasonal spirits and cocktails that showcase the mineral water’s unique character. The guides are knowledgeable about both the agricultural and distillation sides, often sharing stories about challenges of organic farming at elevation and the process of sourcing deep ocean water. The atmosphere feels more like visiting a working farm than a typical distillery, with the scent of sugar cane and tropical plants mixing with the clean, mineral notes of the spirits.

IS IT WORTH VISITING

If you’re interested in agricultural spirits production and want to see something genuinely unique to Hawaii, this is worth the drive up to Kula. The combination of organic farming, ocean water sourcing, and volcanic terroir creates an experience you won’t find at mainland distilleries. It’s particularly appealing to visitors who want to understand how local ingredients translate into spirits, and the farm setting makes it family-friendly. The elevation and rural location mean it’s not a quick stop, so plan for a half-day excursion. Those looking for a wide variety of spirits or a party atmosphere might be better served elsewhere, as this focuses specifically on vodka and rum with an educational, agricultural bent. The views and setting are spectacular, but the real draw is seeing integrated farming and distilling in action.

⚠️ VISITING TIPS

Book tours in advance through their website, especially during peak tourist seasons from December through April. The distillery is about 45 minutes from central Maui locations, and GPS can be unreliable in upcountry areas, so allow extra travel time and look for the organic farm signs on Omaopio Road. Tours run several times daily, but call ahead to confirm availability as they sometimes close for private events or maintenance. The elevation makes it cooler than beach areas, so bring a light jacket. Ask specifically about their ocean water sourcing process and organic certification, as these are the most interesting technical aspects. If you’re interested in agriculture, request time to walk through the gardens beyond the basic tour. The gift shop sells bottles at distillery prices, which can be significantly less than resort retail.
