ABOUT THIS DISTILLERY

Historic Ice Plant Turned Craft Distillery

Tucked into a historic brick building at 437 E South St in downtown Wooster, Minglewood Distilling Co & The Ice Plant occupies what was once Wooster’s actual ice manufacturing plant from the early 1900s. Founded by local entrepreneur Chad Gerstner, who left his corporate career to chase his passion for craft spirits, this operation opened its doors in 2017 after three years of planning, permitting, and renovating the century-old industrial space. The distillery produces small-batch bourbon, rye whiskey, and vodka using locally sourced grains when possible, while maintaining the building’s industrial character with exposed brick walls, original wooden beams, and vintage machinery displays that nod to the building’s ice-making past. The name itself pays homage to both the historic Ice Plant location and the idea of ‘mingling’ different spirits and flavors to create something unique. What started as Gerstner’s weekend hobby of home distilling evolved into a full-scale operation that’s become a cornerstone of Wooster’s growing craft beverage scene. The facility houses custom copper stills and fermentation tanks, while the tasting room maintains the raw, authentic feel of the original ice plant with polished concrete floors and industrial lighting that creates an unexpectedly warm atmosphere for sampling spirits.

WHAT SETS THEM APART

Original Industrial Machinery Still on Display

The building’s history as Wooster’s original ice plant gives this distillery a genuine connection to the city’s industrial past that you can’t manufacture. Gerstner didn’t just renovate the space—he preserved key elements of the ice-making machinery and incorporated them into the distillery’s aesthetic, creating a museum-like quality that tells the story of both old and new American manufacturing. The location in downtown Wooster also makes it one of the few walkable distillery experiences in rural Ohio, where most craft distilleries require a drive out to farmland. Their approach focuses on transparency in production, with the entire distilling process visible from the tasting room, and they’ve maintained a genuine small-batch scale rather than rapidly expanding like many craft distilleries that achieve early success.

THE VISITOR EXPERIENCE

Working Stills Meet Century-Old Brick

You’ll walk into what feels more like an industrial museum than a typical distillery tasting room, with original ice plant machinery creating conversation pieces throughout the space. The exposed brick walls and polished concrete floors give off serious urban loft vibes, while the working stills and fermentation tanks remind you this is an active production facility. Chad or his team usually handle tastings personally, walking you through their current lineup while explaining how they’ve adapted the historic space for modern distilling. The atmosphere strikes a balance between educational and relaxed—you’ll learn about the building’s ice-making history and the distilling process without feeling like you’re in a formal classroom setting.

IS IT WORTH VISITING

Downtown Walkable Distillery Experience

If you’re into industrial history and craft spirits, this hits both interests perfectly. The building alone makes it worth the stop, especially if you appreciate adaptive reuse projects that honor a structure’s original purpose. Their spirits are solid for a relatively young distillery, though don’t expect aged bourbons that compete with Kentucky’s decades-old operations. This works best for visitors who want to support local craft businesses and enjoy seeing the actual production process rather than just sampling finished products. The downtown Wooster location also means you can easily combine it with other local businesses for a full afternoon of exploring.

⚠️ VISITING TIPS

Call ahead or check their social media for current hours, as they sometimes adjust schedules for production needs or special events. Parking is available on the street and in nearby lots, though downtown Wooster isn’t difficult to navigate. Ask specifically about the building’s ice plant history—they’ve got photos and stories that aren’t immediately obvious to casual visitors. If you’re interested in purchasing bottles, their vodka tends to be their most consistent product while their whiskeys are still developing character as they age. Weekend visits often have the best energy and staff availability for longer conversations about the process.

FREQUENTLY ASKED QUESTIONS

Minglewood Distilling Co & The Ice Plant — Visitor FAQ

What’s the story behind the Ice Plant name?
The building actually housed Wooster’s ice manufacturing plant in the early 1900s, where they made and distributed ice before electric refrigeration became common. Chad preserved some of the original ice-making equipment and incorporated the history into the distillery’s identity, making the name a genuine connection to the building’s past rather than just clever branding.
How long has Minglewood been in operation?
They opened in 2017 after three years of planning, renovating, and navigating the permitting process. Chad Gerstner started as a home distiller before deciding to turn his hobby into a full commercial operation in this historic downtown Wooster building.
Can I see the actual distilling equipment during my visit?
Absolutely—the production area is visible from the tasting room, and tours include seeing the milling, fermentation, distillation, and aging processes up close. They’ve designed the space so visitors can watch the actual work of making spirits rather than just sampling the finished products.
