A Working Farm That Happens to Make Whiskey

Log Still Distillery sits on a working farm along Dee Head Road in New Haven, Kentucky, about 30 minutes south of Louisville. Founded by Tim and Pam Smith in 2013, this family operation started as a retirement project that grew into something much bigger. Tim spent decades in manufacturing while Pam worked in healthcare, but they’d always dreamed of doing something together on their 40-acre property. The distillery operates out of a converted barn that the Smiths renovated themselves, complete with a custom-built copper still they sourced from Kentucky. The Smiths didn’t jump into distilling blindly. Tim spent two years learning the craft, studying under local distillers and perfecting recipes in small batches before they ever opened to the public. They focus on traditional bourbon and moonshine, using a mash bill that includes corn grown right on their farm. Pam handles the business side while Tim runs production, and they’ve kept things intentionally small-scale. Their 500-gallon copper pot still produces about 20 barrels per month when they’re running full tilt. What you’ll find here is the real deal—a working farm distillery where the owners are usually on-site and genuinely excited to share what they’ve built. The tasting room overlooks the farm, and you can often see cattle grazing in the distance while you sample their spirits. It’s not fancy or polished, but that’s exactly the point. Grain to Glass From the Same Field

Log Still is one of the few distilleries in Kentucky that grows some of its own grain on-site. Tim Smith plants about 10 acres of corn each year specifically for distilling, though he supplements with local sources for the full mash bill. The farm-to-bottle approach isn’t just marketing—you can literally see the cornfield from the tasting room windows. They also use a traditional sour mash process with their own proprietary yeast strain that Tim developed over several years of experimentation. The location itself is unusual for a distillery—it’s genuinely rural, surrounded by working farmland rather than positioned for tourist traffic.

Tours happen by appointment only, and either Tim or Pam will personally walk you through the operation. You’ll start in the grain room where they store their corn, then see the mashing and fermentation process up close. How long has their bourbon been aging?
They started laying down bourbon in 2014, so their oldest stocks are approaching 10 years. They use smaller 15-gallon barrels which speeds up the aging process compared to standard 53-gallon barrels. Most of what they’re selling now has been aging 4-6 years.
Can I see the corn growing that goes into their spirits?
During growing season, yes—you can see their cornfield right from the tasting room. Tim plants about 10 acres each spring and harvests in fall. The corn is dried and stored on-site, so they can show you the grain that will eventually become bourbon or moonshine.
