Jackson Hole Still Works sits at the base of the Teton Range in Jackson, Wyoming, founded in 2013 by Kyle Pollock, a former investment banker who traded Wall Street for the craft spirits world. The distillery operates out of a 4,000-square-foot facility on Eagle View Drive, where Pollock and his small team produce vodka, gin, and whiskey using a custom-built 250-gallon copper still from Germany. What started as Pollock’s passion project during visits to Jackson has grown into Wyoming’s first legal distillery since Prohibition, bringing craft spirits production back to a state known more for its natural beauty than its booze.
Pollock’s journey from finance to distilling wasn’t typical. He spent years perfecting recipes and navigating Wyoming’s complex liquor laws before opening his doors. The operation remains intentionally small-scale, with Pollock handling much of the production himself alongside master distiller responsibilities. They source their grains locally when possible and use mountain water from the area, embracing the ‘grain-to-glass’ philosophy that defines true craft distilling. The distillery faced early challenges with distribution and regulations, but Pollock’s persistence paid off when they became the first to legally distill in Wyoming in over 80 years.
