ABOUT THIS DISTILLERY

Independent Distilling Company sits in downtown Decatur, Georgia, just outside Atlanta, in a converted warehouse space that buzzes with the energy of craft spirits production. Founded in 2017 by husband-and-wife team Todd and Jennifer Matthews, the distillery emerged from Todd’s background as a chemical engineer and Jennifer’s marketing expertise, combined with their shared passion for creating unique spirits. The 5,000-square-foot facility houses custom copper stills and fermentation tanks, where they produce small-batch whiskey, gin, and vodka using locally sourced ingredients whenever possible. The Matthews spent three years navigating Georgia’s distillery laws and perfecting their recipes before opening their doors to the public. Todd’s engineering background shows in their precise approach to distillation, while Jennifer handles the business side and community connections that have made them a fixture in Decatur’s growing food and beverage scene. Their master distiller brings experience from larger operations but embraces the creative freedom that comes with small-batch production, experimenting with different mash bills and aging techniques. Visitors find themselves in an active production facility where the smell of fermenting grain mingles with the sharp scent of gin botanicals. The tasting room overlooks the production floor, so you’re watching the process while sampling the results. It’s not polished like the big tourist distilleries, but that’s exactly the point – you’re seeing craft distilling in action, complete with the occasional hiccup and the constant tinkering that defines small-scale spirits production.

WHAT SETS THEM APART

What sets Independent Distilling apart is their willingness to experiment with unconventional approaches while maintaining traditional foundations. They’re one of the few Georgia distilleries using a custom-built hybrid still system that allows them to switch between column and pot still distillation depending on the spirit they’re making. Their gin incorporates locally foraged botanicals from North Georgia mountains, creating seasonal variations you won’t find elsewhere. The whiskey program focuses on experimenting with different wood types for aging, including Georgia oak and cherry wood, rather than sticking to standard charred oak barrels.

THE VISITOR EXPERIENCE

Tours are led by the distilling team themselves, not hired guides, so you’re getting technical details and honest stories about what works and what doesn’t. The space feels like a working distillery first and tourist destination second – you’ll see grain bags stacked in corners and smell the yeast working in open fermenters. Tastings happen at a simple bar overlooking the production floor, where you can watch them working while you sample. The atmosphere is casual and educational, with plenty of opportunity to ask questions about the process and see the equipment up close.

IS IT WORTH VISITING

This is perfect for spirits enthusiasts who want to understand the craft distilling process rather than just consume the end product. If you’re looking for a polished tourist experience with gift shops and perfectly manicured grounds, this isn’t it. But if you want to meet the people making the spirits, understand their process, and taste things you can’t find elsewhere, it’s absolutely worth the trip. The experimental nature means you might taste something that doesn’t make it to market, which gives the whole experience a sense of discovery.

⚠️ VISITING TIPS

Call ahead or check their social media before visiting – they’re a working distillery first, and production schedules can affect tour availability. Parking is limited in downtown Decatur, but there’s usually street parking within a block. Ask specifically about their seasonal gin variations if you visit during spring or fall when they’re foraging botanicals. Don’t expect a lengthy tour – it’s a compact operation, but the conversation tends to run long if you’re genuinely interested in the process. Bring cash for bottle purchases, as their card processing can be temperamental.

FREQUENTLY ASKED QUESTIONS

Yes, definitely call ahead. They’re a small operation and tours depend on production schedules. Weekend slots fill up quickly, especially during peak seasons.
