ABOUT THIS DISTILLERY

A Couple's Dream In Small Town Minnesota

Harmony Spirits sits in the small town of Harmony, Minnesota, about 20 miles south of Rochester in the heart of bluff country. Founded by Paul and Michelle Wiese in 2018, this craft distillery operates out of a converted building on First Avenue Northwest. Paul, a former engineer, and Michelle, who worked in healthcare, decided to chase their dream of creating quality spirits after years of home brewing and experimenting with distillation. They officially opened their doors to the public in 2019, making them one of the newer additions to Minnesota’s growing craft spirits scene. The journey wasn’t exactly smooth sailing. The Wieses spent nearly two years navigating local regulations and converting their space into a proper distillery. Paul handles most of the production side, working with a custom-built copper still system, while Michelle manages the business operations and visitor experience. Their philosophy centers on using local ingredients when possible and keeping production small enough that they can control every step of the process. They focus primarily on whiskey and bourbon, though they’ve experimented with other spirits as their confidence and customer base have grown. Visitors get a genuine small-town distillery experience here. The tasting room has that comfortable, unpretentious vibe you’d expect from a couple who left corporate careers to follow their passion. You’re likely to meet Paul or Michelle during your visit, and they’re genuinely excited to talk about their process and share their spirits. The space isn’t huge or flashy, but it’s authentic. You can see the production area during tours and get a real sense of how hands-on their operation is.

WHAT SETS THEM APART

Engineer Turned Distiller With Personal Touch

What sets Harmony Spirits apart is really the personal touch and their commitment to staying small. Paul and Michelle are usually on-site, so you’re getting your tour and tasting from the actual people who made the spirits you’re trying. They’re part of a small wave of engineer-turned-distillers who bring that methodical, problem-solving approach to spirits production. Their location in rural Minnesota also means they’re sourcing some ingredients locally and connecting with the agricultural community around them. The scale is intimate enough that they can experiment with different mash bills and aging techniques without the pressure of massive production quotas.

THE VISITOR EXPERIENCE

Meet the Makers Not Just Employees

Tours are pretty informal and conversational. You’ll likely get either Paul or Michelle walking you through their setup, explaining their copper still system and showing you their barrel storage area. The tasting room feels more like visiting someone’s well-appointed basement bar than a commercial space. They’ll pour you samples of whatever they currently have available, and they’re happy to talk about the differences between batches or answer technical questions about their process. The whole experience usually runs about an hour, depending on how many questions you ask and how much the conversation flows.

IS IT WORTH VISITING

Authentic Craft Experience Worth the Drive

If you’re into craft spirits and appreciate meeting the actual makers, absolutely. This isn’t a polished tourist attraction with scripted tours and gift shops full of branded merchandise. It’s a genuine small craft operation where you can learn about the distilling process from people who are still figuring some of it out themselves. Whiskey enthusiasts will appreciate the opportunity to try spirits that aren’t distributed widely and to understand the challenges of small-batch production. If you’re looking for a slick, entertainment-focused experience, this might not be your speed. But if you want authenticity and the chance to support a local business doing things the hard way, it’s definitely worth the drive.

⚠️ VISITING TIPS

Call ahead before making the trip since hours can be variable and they sometimes close for production or personal reasons. The location is pretty easy to find on First Avenue, and parking isn’t an issue in small-town Harmony. If you’re coming from Rochester or the Twin Cities, plan to explore the area a bit since Harmony is in beautiful bluff country with decent hiking and scenic drives. Ask Paul about his engineering background and how it influences his approach to distilling – he’s got some interesting insights about the technical side. Don’t expect a huge selection of spirits to taste since they’re still building their lineup, but what they have is thoughtfully made.

FREQUENTLY ASKED QUESTIONS

Harmony Spirits — Visitor FAQ

Do I need to make an appointment to visit?
Yes, definitely call ahead. Paul and Michelle run the operation themselves, so they need advance notice to make sure someone’s available for tours and tastings. Hours can vary based on production schedules.
How long does a visit typically take?
Plan on about an hour for the tour and tasting. It can run longer if you’re really into the technical aspects of distilling since Paul loves talking about the process and equipment.
What spirits can I expect to try during a tasting?
They focus primarily on bourbon and whiskey, though the exact selection depends on what they currently have ready. Since they’re a small operation, batches can sell out and new ones might still be aging. They’re usually working on experimental batches too.
